Vegan Chocolate Peanut Butter Ritz Cookies

Salty, sweet, and deliciously vegan, these Chocolate Peanut Butter Ritz Cookies are a must make holiday treat. These addictive no-bake cookies are made with layers of Ritz crackers, creamy peanut butter, and a vegan chocolate coating.

Thanksgiving 2022 my son discovered the magic that is Ritz Crackers. (Thank you, Sarah) He affectionately dubbed them “momos” and they will forever be referred to as momos in our home.

If you have a toddler or remember the days of feeding toddlers then you know that once you find something they will eat, you keep it on hand. Constantly.

Momos have been a fixture in our pantry since November 2022 and I don’t think there will be a day they aren’t fully stocked in the kitchen again.

While we love to eat them plain, dip them in hummus, and spread some vegan cheese on top of them, I also enjoy them with a little peanut butter, add a touch of chocolate, and a sprinkle of salt you’ve got yourself an addictive holiday treat!

These vegan peanut butter Ritz cookies take the lunchbox classic of Ritz peanut butter sandwiches up a notch with a delicious chocolate coating.

How to Make Vegan Chocolate Peanut Butter Ritz Cookies

Ingredients You’ll Need

  • Ritz Crackers– Make sure to use the original Ritz crackers.
  • Peanut Butter– Plain creamy peanut butter works best in this recipe.
  • Vegan Chocolate– Personally I like to use a dark chocolate chip for easy melting.
  • Coconut Oil– Thins out the chocolate chips for a smoother chocolate coating.
  • Flaky Sea Salt– Used to sprinkle on the top and balance the sweetness of the chocolate coating.

Step-by-Step Directions for vegan Chocolate Peanut Butter Ritz Cookies

  • Prep for cookies: Line a rimmed baking sheet with parchment paper.
  • Line Ritz up: Place 15 Ritz crackers on parchment paper flat side up.
  • Add peanut butter: Spread 1/2 Tablespoon of peanut butter on the Ritz cracker. Try to make the top as level as possible.
  • Top with Ritz: Place another Ritz cracker, flat side down, on top of the peanut butter coated side of the Ritz.
  • Repeat with the remaining 14 Ritz crackers. You should now have 15 Ritz peanut butter sandwiches.
  • Melt chocolate: Using a double broiler, or in the microwave, heat chocolate with coconut oil.
  • Stir to smooth: Stir the melted chocolate and coconut oil until completely melted.
  • Dip each Ritz sandwich individually and then place on the parchment paper lined baking sheet.
  • Sprinkle with sea salt and allow to set at room temperature or pop into the refrigerator to set until firm.

  • 30 Ritz Crackers
  • 7 ½ Tablespoons Peanut Butter
  • 9 ounces Dark Chocolate dairy-free
  • ¼ teaspoon Coconut Oil
  • Flaky Sea Salt to sprinkle on top

Instructions

  1. Line a rimmed baking sheet with parchment paper. Place 15 Ritz crackers on parchment paper flat side up.
