You know I am all about a good, savory breakfast. Whether it’s a sausage and egg kolache or a slice of warm quiche, I just love to start my morning with something savory. Up until a few weeks ago, I didn’t really have a go-to recipe for breakfast potatoes. I had tried (and failed) many times to make them in a skillet or to bake them in the oven but they always fell short of my expectations.
Either they wouldn’t be crispy enough or I had to use an excess of oil to get them to fry, no matter what, they just weren’t as satisfying as I wanted them to be. That was until I learned the key to crispy oven-baked potatoes… cornstarch. Once I added cornstarch to the potato coating, I could keep the oil to a minimum for perfectly crispy, oven-baked home fries.

How to Make The Best Breakfast Potatoes
Ingredients You’ll Need
There are just a handful of pantry staple ingredients you’ll need to whip up this easy breakfast side dish.
- Potatoes- Washed, peeled, and diced russet potatoes work great in this home fries recipe.
- Olive Oil- Coats the chopped potatoes to allow the seasoning to stick to the potatoes during the baking progress.
- Salt and Pepper- For all the flavor.
- A blend of spices- Made from garlic powder, paprika, and oregano, gives these home fries the perfect flavor to pair with everything.
- Cornstarch- Coats the breakfast potatoes and helps them bake up with an extra crispy exterior.
Oven-Baked Home Fries Directions
- Prepare for baking. Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Wash and peel the potatoes.
- Dice the potatoes into 1/2-inch cubes.
- Mix the seasonings. In a small bowl, stir together salt, pepper, garlic powder, paprika, oregano, and cornstarch. Set aside.
- Coat the potatoes. Place the diced potatoes into a medium bowl and coat with olive oil.
- Season the potatoes. Sprinkle the seasoning over the potatoes and stir to coat evenly.
- Bake. Pour the potatoes onto the prepared baking sheet and bake for 45 minutes. Stir about every 15 minutes to make sure they evenly bake.

- As a side. Dish out these crispy breakfast potatoes with some bacon, sausage, or eggs for a filling and savory breakfast.
- In a breakfast bowl. Top these crispy home fries with an over-easy egg, chopped bacon, and fresh chive for a filling breakfast bowl.
- Part of a breakfast burrito. Wrap these oven-baked potatoes in a warm tortilla and mixed with scrambled eggs and cooked breakfast sausage.
Storing and Reheating Breakfast Potatoes
Once you’ve made these easy oven-roasted breakfast potatoes you might be looking for some ways to store and reheat them.
- Storing- These easy and gluten-free home fries will keep in an air-tight container for up to 5 days in the refrigerator.
- Microwave- You can reheat them in the microwave in 30-second intervals but know they won’t be as crispy.
- Skillet- Toss these breakfast potatoes into a hot skillet and reheat until warmed through. You might need to add some additional oil in the skillet to prevent the potatoes from sticking.
- Oven- Pop these potatoes back in the oven on a parchment paper lined baking sheet. Bake at 350°F for about 20 minutes, stirring half-way through.

Do I need to boil the potatoes before baking them?
No, these easy to make potatoes do not need to boil before baking. Since you are chopping the potatoes into 1/2-inch cubes they are small enough to bake completely through during the roasting process.
Why are my breakfast potatoes soggy?
Soggy potatoes are the last thing you want in the morning. One of the ways to prevent your potatoes from baking into a soggy mess is to use cornstarch to coat them. This helps give the exterior a crispy finish.
