Start your morning with simple, flavorful, and filling breakfast tacos. These easy to make Mexican-inspired breakfast tacos are quick, versatile, and deliciously dairy-free.

I don’t know if I’ve confessed this to you before and if I have, I apologize, but it still rings true. BREAKFAST FOOD IS THE BEST FOOD EVER.

I am not the only one who feels this way. I am in the midst of a strong Parks and Recreation binge. Thus I would like to bring your attention to banter between Ron and Leslie.

I could eat breakfast for every meal of the day for the rest of my life and it would be pure bliss.

What Makes a Great Breakfast Taco?

Breakfast Tacos became a staple in our house just after our move to Connecticut. There were no good breakfast tacos, taquitos (missing you, What-a-burger), or burritos in sight. We kissed those good-bye at the Texas-Louisiana border.

After years of making breakfast tacos at home there are a few things we have learned about making a quality breakfast taco from the comfort of your own kitchen.

Good Tortillas

Since the tortilla is the base of this recipe, it’s important to get a good one. If you are lucky enough to live near an HEB, pick up some of their fresh made tortillas and live your best life. Unfortunately not everyone can use HEB tortillas so here are a few tips for getting the best flour tortilla.

  • Make your own. My neighbor, in Connecticut, taught us how to make fluffy flour tortillas at home and we love making our own.
  • Go to your local Mexican food restaurant and order tortillas to go from them.

Fresh Scrambled Eggs

There are some parts of this breakfast taco you can make the night before… pretty much everything except the scrambled eggs.

If you want a great breakfast taco, make the scrambled eggs just before serving the tacos.

Why We Love Breakfast Tacos

The best thing about these tacos is there is no strict recipe. You can modify this to fit your preferences and never have to have the same taco twice. Unless, like me, you are a creature of habit…

Some other reasons we love making these breakfast tacos include:

  • Customizable. Since you are making them at your home, you are welcome to dress them up as much or as little as you want.
  • Easy to prep the night before. You can whip up some of your toppings the night before or better yet, use your leftovers from taco night to make your breakfast tacos fully loaded.
  • Great any time of day. Serve these up for breakfast, brunch, lunch, or dinner, there is no wrong time to eat a breakfast taco.

How to Make Breakfast Tacos at Home

Ingredients You’ll Need

Since you can make a breakfast taco with just about any ingredient you want, I’ll walk you through our family favorite base of refried beans and scrambled eggs. Then build up from there.

  • Tortillas– The base of this beautiful breakfast taco.
  • Refried beans– You can buy a pre-made canned version or make your own, no judgement here.
  • Scrambled eggs- Fluffy and perfectly cooked.
  • Meat– Breakfast sausage, bacon, or left over taco meat works well.
  • Toppings– Salsa, guacamole, avocado, cilantro, jalapeƱo, green onion….

Directions for the Best Breakfast Tacos

Step 1: Make Refried Beans

  • Heat oil in a skillet.
  • Add onions and beans, cook about 5 minutes.
  • Season: Add seasoning (garlic, onion, chili, cumin) and water.
  • Mash beans to desired consistency.
  • Add additional water as needed and simmer.

Step 2: Scramble Eggs

  • Crack eggs into a warm skillet with melted vegan butter.
  • Slowly scramble: Using a rubber spatula push the eggs in the skillet to scramble.
  • Cook until just cooked through and remove from pan.

Final Step: TOPPINGS

There is no wrong way to top these breakfast tacos. Here are a few different toppings we like to use on our morning breakfast tacos.

  • Meat- Sausage, bacon, or even leftover taco meat
  • Avocado or guacamole
  • Salsa or hot sauce (or both if you’re my husband)
  • Cilantro
  • Green onion
  • JalapeƱo
  • Pico de gallo

Pro Tips for Making Breakfast Tacos

  • Make your tortillas first, if you are making them from scratch.
  • Prep all of the toppings before you make the scrambled eggs.
  • Use your oven’s warm setting to keep everything warm until you are ready to serve.

Breakfast Tacos

These quick and easy breakfast tacos are an excellent breakfast or breakfast for dinner recipe!

Ingredients

  • 6 Eggs
  • 6 Bacon Slices Cooked
  • 6 Flour Tortillas
  • Cilantro Chopped for Garnish
  • Green Onion Chopped for Garnish
  • Guacamole

Refried Beans

  • 1 can Pinto Beans Drained and Rinsed
  • Ā½ Spanish Onion Diced
  • 2 Tbsp. Olive Oil
  • 1 Pod Garlic Microplaned
  • Ā¼ tsp. Garlic Powder
  • Ā¼ tsp. Onion Powder
  • Ā¼ tsp. Chili Powder
  • Ā¼ tsp. Cumin
  • Salt and Pepper To Taste
  • Ā¼-Ā½ c. Water
  • Ā¼ c. Cilantro Chopped

Instructions

Directions for Refried Beans

  1. Heat olive oil in a skillet over medium heat. Add onions and pinto beans and cook until onions are translucent. While you are cooking the beans, occasionally smoosh the beans with a spatula.

  2. Once the onions are translucent add the garlic, garlic powder, onion powder, chili powder, and ground cumin to the pan along with salt, pepper, and Ā¼ cup of water. Stir to incorporate all of the ingredients. Add additional water as needed.

  3. This is now where personal preference comes into play. If you like your beans lumpy, simply mash lightly with a spatula. If you like them semi-smooth use an immersion blender to lightly break up the beans. And if you like them entirely smooth crank them in a blender until done.

  4. Once they are at your desired consistency add cilantro and additional salt and pepper to taste.

Prepare the Ingredients

  1. Fry bacon and then chop into bite sized bits. Alternatively you can chop up the raw bacon and fry into bits.

  2. Scramble your eggs. My husband likes to crack the eggs into a warm pan and scramble them as they cook. I grew up scrambling them in a bowl and then pouring into the pan. Both methods work well but one involves more dishes.

Assemble your Tacos!

  1. To assemble the taco begin with a warm tortilla. Spread refried beans on the bottom. Top the beans with bacon then guacamole. Scoop some scrambled eggs on top of the guac and sprinkle with cilantro and green onion. Salt and Pepper to taste!
