Quick, simple, and delightfully vegan, this one-pot recipe for garlic pasta makes a delicious dinner you can have on your table in just 30 minutes.
In a deep skillet or pasta pot, melt 2 Tablespoons vegan butter.
Once melted add 4 cloves microplaned or minced garlic and cook about 1 minute, or until fragrant.
Next add 2 cups vegetable broth, 1 cup oat milk, 8 ounces fettuccini pasta, ½ teaspoon salt, and ¼ teaspoon pepper.
Bring the mixture to a boil, then reduce to a simmer.
Cover and cook for 18-20 minutes, stirring occasionally.
Remove from the stove and stir in 2 Tablespoons nutritional yeast (if you are using) and 2 Tablespoons fresh basil.
