Our evening routine has started to settle into a more predictable pattern with our youngest napping from 5-6 (thank you Mom’s on Call) which leave my hands free to whip up dinner before our 6:30 dinner time.

While an hour sounds like a decent amount of time, I am always looking out for dinners that are ready in 30 minutes or less so I can easily clean up from the meal prep or be ready if our youngest wakes up early from her nap.

This one pot vegan pasta is not only low on effort and dishes, it also is ready in less than 30 minutes making it perfect for our dinner rotation.

There are four ingredients in this one-pot pasta recipe that keep it deliciously dairy-free as well as vegan.

  • Plant-based butter swaps out a traditional butter.
  • Use oat milk for a creamy whole milk alternative. Use an unsweetened oat milk to avoid adding a sweet taste to the dish.
  • Opt for a vegetable broth instead of a chicken or beef broth.
  • Nutritional yeast steps in at the end to give a nutty, cheesy, flavor to the pasta dish.

How to Make Vegan One-Pot Garlic Pasta

Ingredients You’ll Need

  • Plant-based butter– Melted with the garlic for a delicious flavor.
  • Garlic cloves- Fresh microplaned garlic gives this dish a delightful garlicky flavor.
  • Vegetable broth– I used a low sodium vegetable broth in this pasta dish.
  • Oat milk– Unsweetened and unflavored works great as a heavy cream alternative.
  • Fettuccini- 8 ounces of fettuccini pasta, uncooked goes into this one-pot dish.
  • Salt + Pepper– For flavor.
  • Nutritional Yeast- Adds a nutty, cheesy flavor to the pasta at the end.
  • Fresh herbs– I’ve used both basil and parsley to finish off this vegan pasta recipe.

Step-by-Step Directions for

  • Melt butter: In a deep skillet or pasta pot, melt vegan butter.
  • Add garlic: Once melted add garlic and cook about 1 minute, or until fragrant.
  • Liquids + Pasta: Next add vegetable broth, oat milk, fettuccini pasta, salt, and pepper.
  • Boil: Bring the mixture to a boil, then reduce to a simmer.
  • Cover and cook for 18-20 minutes, stirring occasionally.
  • Nooch + basil: Remove from the stove and stir in nutritional yeast and basil.
  • Serve immediately and enjoy!

Helpful Kitchen Tools

This recipe is a quick, one pot dish making it low on kitchen utensils. Here are the three main things you will need to make this dish.

  • Microplane– Used to grate the garlic, you can always just mince the garlic but I love how the microplane makes it more like a paste.
  • Pasta Pot– This is a one pot dish, so make sure your pot is large enough to fit at least 3 cups of fluids in addition to the pasta.
  • Non-Stick Tongs– For tossing the pasta while it’s cooking and serving it up at the end.

I typically use my 3.5 qt. braiser to make this recipe but by no means do you need to buy a new pot just to make this dish. You will still find success with this recipe making it in a pasta pot like the one listed above.

If you want to make it in advance or you have left overs from your dinner, here are some tips for storing and re-heating the pasta.

  • Storing– Keep this vegan one-pot pasta in an air-tight refrigerator safe container for up to 5 days.
  • Reheating– Reheat in the microwave in 30 second intervals until it reaches your desired temperature. You might need to loosen the sauce with a little vegan butter or vegetable broth during the heating process.

Ingredients

  • 2 Tablespoons Plant Based Butter
  • 4 cloves Garlic minced or microplaned
  • 2 cups Vegetable Broth low sodium
  • 1 cup Non-dairy Milk I used plain unsweetened oat milk
  • 8 ounces Fettuccini Pasta
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • 2 Tablespoons Nutritional Yeast optional but excellent
  • 2 Tablespoons Basil or Prasley fresh

Instructions

  1. In a deep skillet or pasta pot, melt 2 Tablespoons vegan butter.

  2. Once melted add 4 cloves microplaned or minced garlic and cook about 1 minute, or until fragrant.

  3. Next add 2 cups vegetable broth, 1 cup oat milk, 8 ounces fettuccini pasta, ½ teaspoon salt, and ¼ teaspoon pepper.

  4. Bring the mixture to a boil, then reduce to a simmer.

  5. Cover and cook for 18-20 minutes, stirring occasionally.

  6. Remove from the stove and stir in 2 Tablespoons nutritional yeast (if you are using) and 2 Tablespoons fresh basil.

  7. Serve immediately and enjoy!
