Vegan Maple Sweet Potato Casserole

Kissed with cinnamon and maple, this vegan sweet potato casserole topped with Dandies Maple-flavored marshmallows makes an excellent holiday side dish. Naturally sweetened with maple syrup and prepared with mostly pantry-staple ingredients, this simple sweet potato casserole is sure to hit the spot!

When the holidays roll around, there are a few dishes that not only match the holiday season, they almost bring the holiday spirit along with them. For me, those dishes include deviled eggs, chess pie, and sweet potato casserole.

This vegan sweet potato casserole recipe takes all of the cozy, comforting feeling of a casserole without any of the butter, milk, or eggs you might find in a more traditional sweet potato casserole recipe.

The combination of cinnamon and maple with roasted sweet potato just can’t be beat! Here are a few more reasons we love making this sweet potato casserole.

  • Simple, pantry staple ingredients. This recipe comes together with just a few ingredients you probably already have on hand.
  • Not too sweet. Unlike most sweet potato casseroles loaded with granulated and brown sugar, this recipe uses a little maple syrup to sweeten the dish.
  • Vegan. From the non-dairy butter to the oat milk and the Dandies vegan marshmallows, this dish is entirely vegan.
  • Great for making ahead. If you are planning to make this dish in advance, there are a number of different ways to make and prep this casserole to be ready ahead of your dinner.

How to Make Maple Sweet Potato Casserole

Ingredients You’ll Need

  • Sweet Potatoes– I would suggest baking your sweet potatoes in advance to cut down on your prep time for this dish.
  • Maple Syrup– Sweetens and flavors this vegan casserole naturally.
  • Vegan Butter- I used Country Crock Plant Butter to keep this sweet potato casserole vegan.
  • Vanilla + Cinnamon– For a little boost of flavor to the casserole.
  • Non-dairy Milk– Any will work, I used oat milk for this recipe.
  • Salt– Just a pinch to balance out the sweetness of the casserole.
  • Dandies Vegan Maple-Flavored Marshmallows– For an added flavor of maple and a delicious topping to the casserole.

Step-By-Step Directions

  • Bake sweet potatoes until they are cooked through. I typically bake my sweet potatoes but you could also air-fry or boil them.
  • Preheat the oven to 350°F to prepare for baking the casserole.
  • Add sweet potatoes to a bowl: Remove the skin from the baked sweet potatoes and place in a large glass bowl.
  • Measure remaining ingredients: Add maple syrup, vegan butter, vanilla, cinnamon, non-dairy milk, and salt to the bowl.
  • Mix until smooth: Using a potato masher or an immersion blender, mix the ingredients together until smooth.
  • Bake: Spread into an 8×8-inch square or 10.5×7.5-inch rectangular baking dish. Bake 20 minutes.
  • Top with marshmallows: Remove from oven and top with maple marshmallows. Bake an additional 5 minutes or until the marshmallows are puffy and warm.
  • Serve: Remove from oven and serve warm.

Vegan and Dairy-Free Changes to Sweet Potato Casserole

Three main changes to this casserole keep it deliciously dairy-free as well as simply vegan.

  • No eggs. While more traditional sweet potato casserole recipes use eggs to bind the casserole together, they did not add anything to the dish so I omitted them and never looked back.
  • Plant-based butter sticks. I used Country Crock Plant Butter to keep this sweet potato casserole vegan.
  • Non-dairy milk. Typically I stick to oat milk when cooking and baking, but any dairy-free milk will work well in this recipe.
  • Vegan Marshmallows. Dandies maple-flavored marshmallows top off this simple casserole recipe making it a deliciously dairy-free and vegan side dish perfect for your holiday season.

Storing and Reheating Instructions

From making ahead to storing and re-heating here are some tips to keep this vegan maple sweet potato casserole fresh and fabulous.

  • Storing– Keep in an air-tight container for up to 5 days in the refrigerator. I like using this Pyrex Baking Dish that also has a lid so I can make and store it in the same container.
  • Make in advance– If you are looking to make this casserole in advance, I would suggest whipping up the base of the casserole and storing until you plan to bake, up to 5 days ahead of time. Then bake the casserole according to the directions before adding the marshmallows and finishing it off.
  • Reheating in the oven – To reheat the entire casserole, cover with foil and bake in the oven for about 15-20 minutes until heated through.
  • Microwave– Scoop your desired amount onto a plate and re-heat in 15 second intervals until heated through.

Ingredients

  • 3 cups Cooked Sweet Potato
  • ¼ cup Maple Syrup
  • ¼ cup Vegan Butter
  • 1 teaspoon Vanilla
  • 1 ½ teaspoons Cinnamon
  • cup Non-dairy Milk
  • teaspoon Salt
  • 8 ounce Maple Marshmallows

Instructions

Baking Sweet Potatoes

  1. Preheat the oven to 425°F. Line a baking sheet with aluminum foil and set aside.

  2. Wash the sweet potatoes to remove excess dirt from the outside. Dry with a towel. Prick the sweet potatoes all over with a fork.

  3. Bake in the oven for 45-55 minutes. The amount of time will vary based on the potato thickness. Simply poke the potato with a fork to see test the softness of the inside of the potato.

Make Maple Sweet Potato Casserole

  1. Preheat the oven to 350°F to prepare for baking the casserole.

  2. Remove the skin from the baked sweet potatoes and place in a large glass bowl.

  3. Add ¼ cup maple syrup, ¼ cup vegan butter, 1 teaspoon vanilla, 1 ½ teaspoons cinnamon, ⅓ cup non-dairy milk, and ⅛ teaspoon salt to the bowl.

  4. Using a potato masher or an immersion blender, mix the ingredients together until smooth.

  5. Spread into an 8×8-inch square or 10.5×7.5-inch rectangular baking dish. Bake 20 minutes.

  6. Remove from oven and top with 8 ounces maple marshmallows. Bake an additional 5 minutes or until the marshmallows are puffy and warm.

  7. Remove from oven and serve warm.
