Oven Baked Sweet Potatoes

This simple oven baked sweet potato recipe makes meal prep a breeze! Perfectly roast your sweet potatoes and eat on them all week!

Sometimes I can be a rather stubborn individual… especially when it comes to eating something I am not entirely sure I want to eat. I put off eating sweet potatoes for no good reason and for years my husband would tell me we should add sweet potatoes to the menu/meal plan/grocery list.

After years of suggesting we add sweet potatoes to our diet, my husband finally won and I couldn’t be happier to say, he was right. (Don’t tell him I said that please) I LOVE sweet potatoes. They are quick to make, pair well with just about anything, can be sweet or savory and pull of marshmallows quite beautifully.

HEALTH BENEFITS OF SWEET POTATOES

Due to the many health benefits of sweet potatoes, they are often favored in healthy eating meal plans. This fibrous root vegetable contains 4 grams of fiber per serving, is low in fat, and contains your daily recommended value of potassium and vitamin A. They also contain tons of antioxidants!

While sweet potatoes tend to be higher in carb, they are often included in many different diet plans such as Whole 30 and Paleo. They are also naturally gluten free making them an excellent food to include in your meal plan.

HOW TO COOK SWEET POTATOES

There are many different ways to cook and eat sweet potatoes. They can easily be cooked using a crock pot, Instant pot or pressure cooker, boiled, fried, and oven baked. Depending on your time and the equipment you have in your home will determine the best way for you to cook or prepare your sweet potato.

Baking sweet potatoes in the oven means no extra appliances needed and very few tools.

HOW TO MAKE OVEN BAKED SWEET POTATOES

Preheat the oven to 425°F. Line a baking sheet with aluminum foil and set aside.

Next, wash and scrub down the sweet potato to remove excess dirt. Pat the sweet potatoes dry.

Prick the outside of the sweet potatoes all over with a fork. Be sure to prick the top, bottom, and sides of the sweet potato. This helps to improve the texture of the sweet potato as it cooks. It also separates the potato from the skin while baking.

Place the potatoes on the foil lined baking sheet and leave a few inches between each potato.

Bake in the oven for 45-50 minutes. Remove from oven and allow to cool before serving. If storing, allow potatoes to cool completely before storing in a Tupperware or container.

DAIRY FREE CHANGES TO OVEN-BAKED SWEET POTATOES

Sweet potatoes are a naturally dairy free food. Once baked, many people use butter or sour cream to garnish and flavor their sweet potatoes. Simply swap the regular butter for vegan butter or use a dairy-free sour cream substitute.
