Vegan Chocolate Peanut Butter Ritz Cookies
Last Updated on November 24, 2023 by Annie
Salty, sweet, and deliciously vegan, these Chocolate Peanut Butter Ritz Cookies are a must make holiday treat. These addictive no-bake cookies are made with layers of Ritz crackers, creamy peanut butter, and a vegan chocolate coating.
Thanksgiving 2022 my son discovered the magic that is Ritz Crackers. (Thank you, Sarah) He affectionately dubbed them “momos” and they will forever be referred to as momos in our home.
If you have a toddler or remember the days of feeding toddlers then you know that once you find something they will eat, you keep it on hand. Constantly.
Momos have been a fixture in our pantry since November 2022 and I don’t think there will be a day they aren’t fully stocked in the kitchen again.
While we love to eat them plain, dip them in hummus, and spread some vegan cheese on top of them, I also enjoy them with a little peanut butter, add a touch of chocolate, and a sprinkle of salt you’ve got yourself an addictive holiday treat!
These vegan peanut butter Ritz cookies take the lunchbox classic of Ritz peanut butter sandwiches up a notch with a delicious chocolate coating.
Why We Love Chocolate Peanut Butter Ritz Cookies
I love a good salty + sweet combo and these chocolate Ritz cookies with a peanut butter filling are no exception. Some of the reasons we like making these no-bake cookies on repeat include:
- Chocolate + Peanut butter. That creamy peanut butter filling compliments the salty crunchy cracker and the sweet chocolate coating perfectly.
- No Bake. Keep those ovens off and enjoy this easy crunchy cookie recipe.
- Great for gifting. Ritz cookies stack, store, and share perfectly. I would highly suggest including them in your holiday cookie box this season!
Vegan Changes to Ritz Chocolate Peanut Butter Cookies
- Dairy-Free Chocolate– For the chocolate coating I used a dark dairy-free chocolate chip melted with coconut oil. Some brands of chocolate chips I have used and liked include:
- Nut Free Option– Use sun butter or cookie butter (make sure your cookie butter is dairy-free like Lotus Biscoff cookie butter) in place of the peanut butter in the center of these sandwich cookies.
