As the school year gets into full swing, the last thing I want to spend my evening time doing is making a long, drawn-out meal that involves a million dishes.

I want a dinner that comes together quickly, is packed with nutritious ingredients, and uses the least amount of dishes. Bonus points for a dish that can also be meal prepped in advance.

What is a Turkey Taco Sweet Potato Skillet?

This simple recipe was inspired by a recipe posted on Pinterest by Dr. Rachel Paul. Her quick and delicious skillet included ingredients and steps but no measurements so I took a few liberties and ended up with a delicious, dairy-free, and filling skillet.

Using my Turkey Taco Meat recipe, I added some diced sweet potatoes and shaved Brussels sprouts to make this 30 minute, one-skillet meal.

How to Make Turkey Taco Sweet Potato Skillet

Ingredients You’ll Need

  • Olive oil- For cooking the sweet potatoes.
  • Sweet Potato– Peeled and chopped into 1/2 inch cubes.
  • Ground Turkey- Used to make the taco meat, you can also use ground beef or ground chicken if you want.
  • Garlic and onion– Diced or microplaned.
  • Brussels Sprouts– Shredded, you can buy them pre-shredded or simply slice your Brussels sprouts into thin ribbons.
  • Spices– A blend of garlic, cumin, paprika, salt, and oregano season the taco meat and sweet potatoes.

Step-by-Step Directions for Ground Turkey Sweet Potato Skillet

  • Cook sweet potatoes: Heat olive oil in a large skillet. Once hot, add diced sweet potatoes and cook for 15 minutes on medium heat. Stir occasionally.
  • Add meat and flavor: Next add onion, garlic, ground turkey and the spices to the pan.
  • Cook until the ground turkey is cooked through, about 10 minutes.
  • Next add the shaved Brussels sprouts, stir and cook about 5 minutes, or until Brussels sprouts are tender.
  • Serve: Remove from the heat and dish out into bowls. Top with garnishes like avocado and cilantro. Enjoy!

This turkey taco sweet potato skillet makes a great weeknight dinner but you can also whip it up in advance and re-heat when you plan to serve it.

  • Storing– Allow the taco skillet to cool and store in an air-tight refrigerator safe container.
  • Reheating– Reheat this turkey taco skillet in the microwave in 30 second intervals or toss into a skillet and reheat on the stove over medium-low heat until warmed through.

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 Sweet Potatoes peeled and cubed into 1/2-inch cubes
  • 1 pound Ground Turkey
  • 1 Onion diced
  • 1 clove Garlic minced or microplaned
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Cumin
  • 2 teaspoons Chili Powder
  • 2 teaspoons Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Oregano
  • 4 cups Shaved Brussels Sprouts

Instructions

  1. Heat 2 Tablespoons olive oil in a large skillet. Once hot, add 2 diced sweet potatoes and cook for 15 minutes on medium heat. Stir occasionally.

  2. Next add 1 diced onion, 1 clove minced garlic, 1 pound ground turkey, 2 teaspoons garlic powder, 2 teaspoons cumin, 2 teaspoons chili powder, 2 teaspoons paprika, 1 teaspoon salt, and 1 teaspoon oregano.

  3. Cook until the ground turkey is cooked through, about 10 minutes.

  4. Next add 4 cups shaved Brussels sprouts, stir and cook about 5 minutes, or until Brussels sprouts are tender.

  5. Remove from the heat and dish out into bowls.

  6. Top with garnishes like avocado and cilantro. Enjoy!
