Today is the start of a little feature segment we will call, for obvious reasons, Taco Tuesday. For the next few Tuesdays I will be sharing with you some of my favorite quick and easy taco recipes. And these shrimp tacos will make a great addition to your taco rotation.

Well this taco Tuesday decision came after a morning, when I had nothing prepared for breakfast. I decided to pull some tortillas out of the freezer and make breakfast tacos, a very common taco in our home, only to realize it had been far too long since I’d made tacos of any kind.

To rectify this problem I told Jason we would now, and probably for the end of time, actively participate in Taco Tuesday. Whether that means making tacos or finding tacos, for the rest of forever we will be eating tacos on a Tuesday.

Why We LOVE these Shrimp Tacos

  • 30 Minutes or less. The shrimp cooks quickly meaning the bulk of your prep time for these easy shrimp tacos will be making additional toppings.
  • Great for a lunch prep. Take the cooked shrimp and toss into a shrimp taco salad that you can prep and eat all week for lunches!
  • Fresh, filling, and flavorful. These tacos honestly are the perfect balance of juicy, fresh, and filling. You won’t be feeling heavy or over-stuffed but you also won’t be hungry 30 minutes later.

The ULTIMATE Shrimp Taco

Okay, now that your shrimp is cooked, you are probably wondering what the best way to assemble these tacos would be. Here is how I achieve the ultimate shrimp taco.

  • Tortilla: Start with a fresh tortilla.
  • Guacamole: Spread about 2 tablespoons of guacamole.
  • Lettuce: Next, top the guac with shredded lettuce.
  • Shrimp: Top the lettuce with 4-5 cooked shrimp.
  • Pico: Sprinkle some pico de Gallo over the shrimp.
