We just keep getting toasted this summer and I am loving it! Last week this toasty summer series took on the sweeter side with a simple peanut butter and banana toast. This week, we’re serving up an extra summery slice of toast made with fresh garden pesto.
Pesto fried eggs made a huge splash on social media a few years back with good reason. Fresh pesto in a hot skillet is used as the oil to cook a fried egg that can easily top a crispy slice of toast.

- Spinach Pesto– I used this simple spinach pesto recipe to keep the pesto dairy-free. If you are looking to use a store-bought pesto be sure to check the ingredients before you begin as most pestos are made with cheese.
- Bread– Look over the ingredients on the package of bread you are planning to use.

Ingredients You’ll Need
- Spinach Pesto– Or another dairy-free pesto for the base.
- Eggs– I like to use a large egg.
- Seasoning– Salt, pepper, and red pepper flakes make a great topper.
- Bread– You can use sliced bread or even french bread cut into thick slices.
Step-by-Step Directions for Pesto Egg on Toast
- Toast bread: Place bread in toaster and toast to your desired level of doneness.
- Heat a small non-stick skillet over medium-low heat.
- Add pesto to the pan and make a small well in the center of the pesto.
- Crack egg: Once hot, crack an egg in the center of the pesto.
- Cover and cook about 2 minutes or until the egg white has set.
- Plate up: Transfer the pesto egg to your toasted bread and top with salt, pepper, green onion, etc.

- 2 Tablespoons Fresh Pesto dairy-free
- 1 large Egg
- Salt + Pepper to taste
- 1 slice Bread toasted
