Mint Chocolate Ice Cream Pie

Cool off with a slice of this Mint Chocolate Ice Cream Pie. Made with a chocolate coated rice krispie crust and filled with a dairy-free mint chocolate chip ice cream this pie is a no-bake dream!

Growing up, the start of the holiday season was marked with my mom making Peppermint Ice Cream Pies. They were her grandmother’s recipe and she only made them during the holidays because it was when Blue Bell would release their limited time only Peppermint Ice Cream.

After years of only having ice cream pies in the winter, we finally convinced her to make them other times in the year (mostly in the summer) with different ice cream flavors. By and large our family favorite was the Mint Chocolate Chip Ice Cream Pie. (If you asked my dad he would probably say the Moo-llennium Crunch pies were his favorite…)

After going dairy-free, my mom gave up eating Blue Bell which meant no more ice cream pies. While I can solve the ice cream pie situation by working on a dairy-free alternative I think the bigger issue is that we need address is to get a pint of dairy-free Blue Bell on the market.

While we wait for Blue Bell to join in on the dairy-free goodness let’s look at how to make these delicious and dairy-free pies with some mint chocolate alternatives.

HOW TO MAKE MINT CHOCOLATE ICE CREAM PIE

INGREDIENTS

Vegan butter– I like using country crock’s plant based butter sticks, coconut oil could also work in this recipe.
Dairy-free chocolate chips– dark or semi-sweet.
Rice Krispy Cereal– this mixed with the melted vegan butter and chocolate chips forms the no-bake pie crust.
Non-dairy ice cream– any non-dairy ice cream that pairs well with chocolate makes a delicious filling in this no bake, ice cream pie!

DIRECTIONS

In a microwave safe bowl melt vegan butter and chocolate chips together. Try zapping in 30 second intervals and stir between rounds of microwaving. Depending on the power of your microwave this should really only take about 2 rounds of heating.

Once melted pour in Rice Krispie cereal and stir to coat entirely with chocolate.

Press the chocolate coated Rice Krispie Cereal into an 8 inch pie pan. Freeze for 10 minutes to allow the pie crust to set.

After the crust sets, fill the chocolate pie crust shell with a pint of softened dairy-free mint chip ice cream. Freeze for about an hour to set. When you are ready to serve remove from freezer and slice into wedges.

DAIRY-FREE CHANGES TO MINT CHOCOLATE ICE CREAM PIES

My great-grandmother’s original recipe used butter, German sweet chocolate, Cocoa Krispy Cereal, and decadent dairy-filled ice cream, here are the details on transforming this holiday classic recipe into a dairy-free dream.

-As always, swap the butter for a vegan or plant based butter. I love using Country Crock’s plant based butter because it works seamlessly with just about any recipe.
Sub the German sweet chocolate for a dairy-free chocolate. I have used Kroger’s free-from chocolate, Enjoy Life Chocolate, and even Walmart’s free-from chocolate varieties and have found them to work wonderfully.
Replace Cocoa Krispy Cereal with traditional Rice Krispie Cereal. It’s mostly for the crunch anyway.
Find your favorite dairy-free ice cream and fill the crust with it!

Is Rice Krispy Cereal dairy-free?

Yes! But, not all rice krispie cereal is dairy-free. My great-grandma’s original recipe called for Cocoa Krispie cereal which contains dairy so I opted for a dairy-free alternative the plain Rice Krispie cereal.

What other ice cream can I use to make these ice cream pies?

Any flavor you want to pair with chocolate. Some delicious dairy-free ice cream alternatives you should pair this chocolate crunchy pie crust with include:

Ben and Jerry’s Mint Chocolate Cookie
Ben and Jerry’s Chocolate Chip Cookie Dough
Talenti Dark Chocolate Sorbetto

Truly the list goes on and on. If it pairs with chocolate, it’ll go deliciously in this pie.

How do you store ice cream pies?

Cover this mint chocolate pie with aluminum foil store in a lidded pie pan.

How long do these scrumptious pies last?? Less than 1 month in the freezer because the rice krispies won’t hold up. They get a little soggy/ stale. To keep it fresh, consume the pie within 2-3 weeks. If you have any difficulty finishing the pie in that time frame simply invite me over and I will take one for the team.
