Easy Chocolate Fudge

This decadent easy chocolate fudge recipe comes together in 5-minutes for a soft chocolaty treat everyone will enjoy! The perfect dairy-free and vegan treat for any occasion!

This holiday season, as I prepped for the my yearly cookie box I made a critical error. I bought a LARGE quantity of sweetened condensed coconut milk when I meant to order evaporated coconut milk… Rookie mistake that lead to these Magic Cookie Bars.

While I truly won’t complain about the mix-up it led to another wrench in my baking plan. When I began to make a batch of Fantasy Fudge, I discovered my error. Instead of evaporated coconut milk, I had over a dozen cans of sweetened condensed coconut milk… I needed to find a fix and FAST.

Cue the internet. A quick search for fudge without evaporated milk not only lead me to an easy fudge recipe, but also a fudge recipe that used sweetened condensed milk! Two birds, one stone here my friends. With a few tweaks and just a few minutes we had easy fudge ready for shipping. Crisis averted.

HOW TO MAKE EASY CHOCOLATE FUDGE

Let me be clear when I say easy… I mean EASY. I’m talking one bowl, 4 ingredients, and less than 5 minutes. This recipe was adapted from Life, Love, Sugar’s Easy Fudge recipe and has pretty much been made weekly since we discovered it!

INGREDIENTS TO MAKE THIS EASY FUDGE

  • Chocolate Chips– Semi-sweet, dairy-free, chocolate chips to be super exact.
  • Sweetened Condensed Coconut Milk– Gives the fudge a melt-in-your-mouth finish.
  • Vanilla– Do I ever make a dessert without using vanilla???
  • Flaky Sea Salt– Not only a super fancy touch but also brings out the flavor of the chocolate.

Step-by-Step Directions

  • Line a square pan: Prepare a square baking dish by lining with parchment paper. Set aside.
  • Heat chocolate + condensed milk: In a microwave safe bowl, heat dairy-free chocolate chips and sweetened condensed coconut milk for 30 seconds.
  • Stir and heat again for another 30 seconds. Depending on your microwave you may need more or less, just keep an eye on it.
  • Add flavor: Remove from the microwave, stir in vanilla and a pinch of salt.
  • Pour into pan: Pour the dairy-free chocolate fudge into the baking pan and sprinkle with flaky sea salt.
  • Refrigerate or freeze until set. Slice into squares and enjoy!

HOW IS EASY FUDGE DIFFERENT FROM OTHER FUDGE?

There are a few notable differences between easy fudge and other, more traditional fudge recipes including:

  • Cooks in the microwave instead of on the stove.
  • Uses sweetened condensed coconut milk instead of evaporated coconut milk.
  • No need to check the temperature with a candy thermometer.
  • Gets the soft, melty finish from the sweetened condensed coconut milk instead of marshmallow fluff.
  • Oh and it literally takes less than 5 minutes to whip up.

HOW DO YOU STORE EASY FUDGE?

After making the fudge, store in an airtight container for up to a week. You can also store in the freezer for up to 3 months. And I have also been informed that wrapped in plastic wrap, shipped across the country, it was still delicious two weeks later. But do you really want to wait that long to eat this tasty treat???
