The summer heat has not been my friend this year. From daily, muggy rain, to hot humid afternoons, I have not found this summer as pleasant as last. In an attempt to keep cool I have been turning to refreshing drinks like watermelon limeade and frozen treats like fudgesicles and these cookies and cream popsicles.

Made with just 5 ingredients and ready in minutes, these quick and easy cookies and cream popsicles are never very far from my freezer. They are a delightful treat you will want to keep making even when the cooler weather starts creeping in.

Why We LOVE These Cookies and Cream Popsicles

How to Make Cookies and Cream Popsicles

Ingredients You’ll Need

5 ingredients stand between you and these delicious dairy-free ice cream popsicles.

  • Oreos– 12 Fresh Oreos work best in this recipe. I like to crush mine with a rolling pin in a plastic bag so I can still have nice chunks of Oreo in each popsicle.
  • Coconut Cream– From a can of full-fat coconut milk, scoop out the thick white cream, typically floating at the top. This makes the popsicles wonderfully thick and creamy.
  • Oat milk– Balances out the rich coconut cream and makes the cookies and cream base a little thinner for pouring.
  • Vanilla– Enhances the flavor of the popsicle base.
  • Sugar– Sweetens the popsicles without overpowering them.

Directions

These easy cookies and cream popsicles come down to a few simple steps, crush, sprinkle, mix, pour, and freeze!

  • Crush Oreo cookies until desired size. We tried both small chunks and larger chunks and enjoyed the larger cookie crumbs much better.
  • Sprinkle Oreo crumbs, just a few per popsicle, in the base of your popsicle molds.
  • Make cookies and cream mixture. In a large liquid measuring cup stir together coconut cream, oat milk, vanilla, sugar, and remaining crushed Oreos.
  • Pour into the popsicle molds carefully so you don’t spill over the top. You might need to spoon some chunks of Oreo into the molds if they are not pouring out easily.
  • Freeze. Add the popsicle sticks to the molds and freeze for at least 4 hours.

Helpful Kitchen Tools

  • 4 Cup Liquid Measuring Cup– I use this measuring cup to mix up the popsicle base for easy pouring into the molds.
  • Mini Popsicle Molds– These mini molds are dish washer safe and great for storing the popsicles in the freezer.

Dairy-Free Changes to Cookies and Cream Popsicles

The main dairy-free ingredients for these popsicles come from the coconut cream and oat milk.

  • Coconut Cream + Oat Milk- The blend of coconut cream and oat milk work as a heavy cream replacement to give these popsicles a creamy, milky flavor without any of the dairy.
  • Oreos- Delicious and dairy-free these cookies are the perfect addition to make these cookies and cream popsicles.

Ingredient Substitutions

I tried this recipe first with Kite Hill Plain Dairy-Free Yogurt. While the mixture worked wonderfully I felt the yogurt left a tart flavor that took away from the rich, vanilla base I was aiming for.

That said, you can swap the coconut cream for a dairy-free yogurt, maybe even try a vanilla dairy-free yogurt, if you are looking for something without coconut for the ice cream base.

Chocolate Dipped

Just like the vegan fudgesicles, these cookies and cream popsicles can easily be dipped in a dairy-free coating of chocolate. To make the chocolate shell:

  • Melt together 1/2 cup of chocolate chips with 2 teaspoons coconut oil.
  • Stir every 30 seconds or less until melted through.
  • Once melted transfer to a tall glass that makes dipping the fudgesicles a breeze.
  • After dipping the popsicle, transfer to a parchment paper lined baking sheet and freeze until set.
  • Alternatively, you can sprinkle some additional crushed Oreo on the chocolate dipped popsicle for an extra Oreo coated treat!

MINI VS. TRADITIONAL SIZE

When I first ordered these mini popsicle molds, I honestly thought they would be a regular-sized mold (obviously I did not check the dimensions of the molds before purchasing and went with them because I thought they looked cute). These homemade cookies and cream popsicles can easily be made in a regular popsicle mold but this will change the number of popsicles yielded as well as the nutritional information listed below.

This cookies and cream popsicle recipe yields roughly 8 mini popsicles and will most likely yield about 4-6 full-sized popsicles. If you make yours with a traditional popsicle mold drop a comment below and let us know how many they made!

How to get Cookies and Cream Popsicles Out of the Mold

This just might be the hardest part of this no-bake recipe and why I recommend taking them all out once they are frozen and keeping them in a freezer-safe bag so you don’t have to take one out at a time every time a craving hits. Here are my top two ways of getting the popsicles out of the mold.

  • Wait: Take the cookies and cream popsicles out of the freezer and wait for them to thaw about 3-5 minutes before trying to remove from the mold.
  • Hot water: Run the popsicle mold under warm water to loosen up the popsicles and pull them out more easily. Alternatively the mini-popsicle mold has a container the mold goes inside that you can fill with warm water and allow the popsicles to sit in and soften a few minutes (1-2) before trying to remove from the mold.

HOW TO STORE Cookies and Cream Popsicles

While you are definitely going to want to keep these ice cream popsicles in the freezer, there are a few different ways you can store these frozen treats.

  • In the molds: Leave them in the molds and take them out one at a time when you are ready to enjoy one.
  • Storage container: Remove them from the molds and store them in a freezer-safe bag or storage container for quick and easy removal when you want to enjoy one.
  • Decorated: If you are planning to dip and decorate your popsicles then I would highly suggest storing them in a freezer-safe container as they will not go back into the molds after dipping.
  • Shelf-Life: These cookies and cream popsicles will keep for up to 3 months in the freezer (not that mine have made it longer than 2 weeks…)
