Hearty, filling, and flavorful, this simple recipe for chocolate peanut butter overnight oats made with chocolate protein powder makes the perfect make-ahead breakfast, snack, or dessert.

Ingredients

Scale
  • 1/2 cup Old Fashioned Oats
  • 1 Tablespoon Chia Seeds
  • 1 scoop Vegan Chocolate Protein Powder (about 3 Tablespoons)
  • 1 Tablespoon Peanut Butter
  • 1/2 Tablespoon Maple Syrup
  • 1/4 teaspoon Vanilla
  • 3/4 cup Non-dairy Milk

Instructions

    1. In a 2 cup mason jar add rolled oats, chia seeds, and chocolate protein powder.
    2. Next add the maple syrup, peanut butter, vanilla, and non-dairy milk.
    3. Using a mini whisk or spoon, mix the overnight oats together.
    4. Secure a lid on the mason jar and store in the refrigerator for at least 8 hours before enjoying.

Notes

  • Storage– These overnight oats will keep for up to 5 days in the refrigerator.
  • Substitutions– Any non-dairy milk will work in this recipe. I will often use 1/2 cup of non-dairy milk and 1/4 cup water to save more of my non-dairy milk for other things in the week.
  • Skip– If you do not like chia seeds, you can omit them without impacting the overall recipe.
