Vegan Frozen Yogurt Bark

Vegan, no-bake, and oh so easy to make, this healthy frozen yogurt bark topped with strawberries, blueberries, and shredded coconut makes a delicious snack or dessert.

Ingredients

  • 2 cup Vegan Vanilla Yogurt
  • ¼ cup Maple Syrup
  • 1 teaspoon Vanilla
  • 1 cup Sliced Strawberries
  • ½ cup Blueberries
  • ¼ cup Shredded Coconut

Instructions

  1. Line a rimmed baking sheet with parchment paper and set aside.

  2. In a medium-sized mixing bowl, whisk together 2 cups vegan yogurt, ¼ cup maple syrup, and 1 teaspoon vanilla.

  3. Spread the sweetened yogurt mixture on the parchment paper lined baking sheet.

  4. Top with 1 cup sliced strawberries, ½ cup blueberries, and ¼ cup shredded coconut.

  5. Freeze until solid (about 2 hours).

  6. Cut into pieces and enjoy!

  7. Keep the yogurt bark pieces stored in a freezer safe container in the freezer for up to 3 months.
