Ingredients

Burrito # 1: Potato and Egg Burritos

  • 1 pound Potato washed, peeled, and cubed
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Salt
  • ¼ teaspoon Pepper
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Paprika
  • ½ teaspoon Oregano
  • ½ Tablespoon Cornstarch
  • 6 Eggs
  • teaspoon Salt and Pepper optional
  • 6 Tortillas flour

Burrito #2: Sausage and Egg Burritos

  • ½ pound Breakfast Sausage
  • 6 Eggs
  • teaspoon Salt and Pepper optional
  • 6 Tortillas flour

Burrito #3: Bacon and Egg Burritos

  • 6 strips Bacon
  • 6 Eggs
  • teaspoon Salt and Pepper optional
  • 6 Tortillas flour

Instructions

Burrito #1: Potato and Egg Burritos

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.

  2. Wash and peel the potatoes. Dice the potatoes into 1/2-inch cubes.

  3. In a small bowl, stir together salt, pepper, garlic powder, paprika, oregano, and cornstarch. Set aside.

  4. Place the diced potatoes into a medium bowl and coat with olive oil.

  5. Sprinkle the seasoning over the potatoes and stir to coat evenly.

  6. Pour the potatoes onto the prepared baking sheet and bake for 45 minutes. Stir about every 15 minutes to make sure they evenly bake.

  7. In a mixing bowl whisk together eggs, salt, and pepper.

  8. Add the eggs to a large skillet over medium-high heat. Scramble and cook until just cooked through.

  9. Toss the roasted potatoes into the skillet with the eggs and stir to combine.

  10. Remove the skillet from the heat and measure 1/4 cup-1/2 cup of potato and egg filling into each tortilla.

  11. Wrap the tortillas into a burrito and then wrap into plastic wrap for storing in the freezer.

  12. Label the wrapped burrito to indicate the flavor and store in the freezer until you are ready to heat and enjoy!

Burrito #2: Sausage and Egg Burrito

  1. In a large skillet over medium-high heat, cook and brown the breakfast sausage until cooked through.

  2. Remove the sausage from the pan, but leave any remaining grease to cook the scrambled eggs.

  3. In a mixing bowl whisk together eggs, salt, and pepper.

  4. Add the eggs to the skillet over medium-high heat. Scramble and cook until just cooked through.

  5. Toss the cooked sausage into the skillet with the eggs and stir to combine.

  6. Remove the skillet from the heat and measure 1/4 cup-1/3 cup of sausage and egg filling into each tortilla.

  7. Wrap the tortillas into a burrito and then wrap into plastic wrap for storing in the freezer.

  8. Label the wrapped burrito to indicate the flavor and store in the freezer until you are ready to heat and enjoy!

Burrito #3: Bacon and Egg Burritos

  1. In a large skillet over medium-high heat, cook the bacon until cooked through.

  2. Remove the bacon from the pan, and drain the bacon grease before cooking the scrambled eggs.

  3. Chop the cooked bacon into bite sized pieces.In a mixing bowl whisk together eggs, salt, and pepper.

  4. Add the eggs to the skillet over medium-high heat. Scramble and cook until just cooked through.

  5. Toss the cooked and chopped bacon into the skillet with the eggs and stir to combine.

  6. Remove the skillet from the heat and measure 1/4 cup-1/3 cup of bacon and egg filling into each tortilla.

  7. Wrap the tortillas into a burrito and then wrap into plastic wrap for storing in the freezer.

  8. Label the wrapped burrito to indicate the flavor and store in the freezer until you are ready to heat and enjoy!

Recipe Notes

How to Reheat a Frozen Breakfast Burrito

Please keep in mind that every microwave is different and the settings might need to be adjusted based on your personal preference and the strength of your microwave.

  • To reheat, remove a burrito from the plastic wrap and wrap in a paper towel.
  • Using a power setting of 50% heat the burrito for about 60 seconds.
  • Turn the burrito over and heat at 100% for about 30-45 seconds.
