Banana Oatmeal Bars with Chocolate Chips

These filling banana baked oatmeal bars with chocolate chips have all of the flavor of banana bread baked up in a quick and easy to eat bar.

Ingredients

  • ¼ cup Coconut Oil melted
  • 2 Bananas
  • 2 Eggs
  • 1 cup Non-dairy Milk
  • 1 teaspoon Vanilla
  • 2 cups Old-Fashioned Oats
  • ½ teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ¼ teaspoon Cinnamon
  • ½ cup Chocolate Chips dairy-free

Instructions

  1. Line an 8x8-inch baking pan with parchment paper and preheat the oven to 350°F.

  2. In a small bowl melt ¼ cup coconut oil and set aside to cool.

  3. In a medium-sized bowl mash 2 bananas until smooth.

  4. Add coconut oil, 2 eggs, 1 cup non-dairy milk, and 1 teaspoon vanilla to the mashed banana and whisk until smooth.

  5. In a large bowl, mix together 2 cups old-fashioned oats, ½ teaspoon baking powder, ¼ teaspoon salt, ¼ teaspoon cinnamon, and ½ cup dairy-free chocolate chips.

  6. Add the wet ingredients to the dry ingredients and mix until smooth.

  7. Pour into the prepared baking dish and top with additional chocolate chips and banana slices.

  8. Bake for 30-35 minutes or until baked through.

  9. Remove from oven and allow to rest about 5 minutes before slicing and serving.
