Almond Joy Lactation Bites

These no-bake, vegan, almond joy lactation bites are a great nursing snack that is quick to put together, easy to eat one handed, and simple to enjoy.

Ingredients

  • 2 Tablespoons Ground Flax
  • 2 Tablespoons Water
  • 1 cup Old Fashioned Oats
  • ¼ cup Almond Butter
  • ¼ cup Maple Syrup
  • 1 Tablespoon Brewer's Yeast
  • 2 Tablespoons Shredded Coconut (plus more to garnish)
  • ¼ cup Vegan Chocolate Chips

Instructions

  1. In a small bowl mix together 2 Tablespoons ground flax with 2 Tablespoons water. Allow mixture to sit 5 minutes.

  2. In a medium sized mixing bowl stir together 1 cup old-fashioned oats, ¼ cup almond butter, ¼ cup maple syrup, 1 Tablespoon brewer's yeast, 2 Tablespoons shredded coconut, the ground flax mixture, and ¼ cup chocolate chips.

  3. Cover the bowl with plastic wrap and refrigerate at least 1 hour.

  4. Scoop and roll into 1-inch sized balls.

  5. Optional: Roll into shredded coconut and drizzle with melted vegan chocolate.
