Pineapple Lemonade

Made with fresh lemons, muddled pineapple, and a simple syrup mixture this easy to make pineapple lemonade is also super easy to enjoy!

Ingredients

  • 5 cups Water divided
  • ½ cup Sugar
  • 1 cup Lemon Juice fresh squeezed
  • 2 cups Pineapple chunks

Instructions

  1. In a small saucepan, heat 1/2 cup of sugar with 1 cup of water.

  2. Stir and cook until the sugar dissolves into the water, about 5-10 minutes.

  3. Remove from heat and allow the simple syrup to cool for about 10 minutes before mixing it into lemonade.

  4. Juice 4-5 lemons to get 1 cup of fresh lemon juice. Set aside

  5. In a large bowl, muddle 2 cups of fresh pineapple chunks. Try to get as much juice out of the pineapple as possible and break the chunks up into small little bits.

  6. Mix the lemon juice and muddled pineapple (juice and bits) into the base of large pitcher.

  7. Add simple syrup to the pitcher and stir.

  8. Pour the remaining 4 cups of water into the pitcher and stir until completely mixed.

  9. Refrigerate the lemonade until chilled or serve over ice.

Here are a few of my favorite ways to enjoy this pineapple lemonade:

  • As is: Refrigerate and serve as is.
  • Bubbly: Pour a glass 2/3rds full of pineapple lemonade and top with Topo Chico.
  • Spiked: Stir 1 cup of vodka into the pitcher of lemonade for a sweet spiked summer treat.
