Snickerdoodle Cookie Bars

Ingredients

  • ½ cup Vegan Butter room temp
  • 1 Egg room temp
  • ¾ cup Granulated Sugar
  • ¼ cup Brown Sugar
  • 1 teaspoon Vanilla
  • cup Flour
  • ¾ teaspoon Cream of Tartar
  • ¼ teaspoon Baking Soda
  • ½ teaspoon Salt
  • ¾ teaspoon Cinnamon

Cinnamon Sugar Topping

  • 2 Tablespoon Granulated Sugar
  • 2 Teaspoon Cinnamon

Instructions

  1. Allow ½ cup vegan butter and 1 egg to come to room temperature. Preheat the oven to 350°F and line an 8x8 baking dish with parchment paper. Set aside.

  2. In a bowl mix together ½ cup vegan butter, ¾ cup granulated sugar, and ¼ cup brown sugar until combined.

  3. Add 1 teaspoon vanilla and 1 egg and stir until fully mixed.

  4. Add 1 ½ cup flour, ¾ teaspoon cream of tartar, ¼ teaspoon baking soda, ½ teaspoon salt, and ¾ teaspoon cinnamon to the bowl.

  5. Fold the flour mixture into the butter mixture until combined.

  6. Evenly spread the batter into the baking dish.

  7. In a small bowl stir together 2 Tablespoons sugar and 2 teaspoons cinnamon for the topping. Sprinkle on top of the cookie batter. Bake for 35-40 minutes.

  8. Remove from oven and allow to cool in the pan for about 10 minutes before removing and cutting into 16 squares.
