Fit a stand or hand mixer with a whisk attachment.
In the bowl, beat together 2 cups chilled plant cream, 2 teaspoons vanilla, and ¼ cup powdered sugar.
Beat on high about 2-3 minutes or until stiff peaks form.
I scraped the sides down once and continued beating to make sure the ingredients were throughly mixed.
