Vegan One-Pot Garlic Pasta

Quick, simple, and delightfully vegan, this one-pot recipe for garlic pasta makes a delicious dinner you can have on your table in just 30 minutes.

Ingredients

  • 2 Tablespoons Plant Based Butter
  • 4 cloves Garlic (minced or microplaned)
  • 2 cups Vegetable Broth (low sodium)
  • 1 cup Non-dairy Milk (I used plain unsweetened oat milk)
  • 8 ounces Fettuccini Pasta
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • 2 Tablespoons Nutritional Yeast (optional but excellent )
  • 2 Tablespoons Basil or Prasley (fresh)

Instructions

  1. In a deep skillet or pasta pot, melt 2 Tablespoons vegan butter.
  2. Once melted add 4 cloves microplaned or minced garlic and cook about 1 minute, or until fragrant.
  3. Next add 2 cups vegetable broth, 1 cup oat milk, 8 ounces fettuccini pasta, ½ teaspoon salt, and ¼ teaspoon pepper.
  4. Bring the mixture to a boil, then reduce to a simmer.
  5. Cover and cook for 18-20 minutes, stirring occasionally.
  6. Remove from the stove and stir in 2 Tablespoons nutritional yeast (if you are using) and 2 Tablespoons fresh basil.
  7. Serve immediately and enjoy!
