Traditional bruschetta involved toasting slices of bread, then rubbing them with garlic and drizzling with olive oil. The version we know today features a vibrant mix of diced tomatoes, fresh basil, garlic, and olive oil.

Whether served as a starter or a snack, bruschetta is a well loved dish enjoyed around the world for it’s simplicity and fresh flavors.

I think there are a number of reasons bruschetta has become such a beloved dish across the world. Some of the reasons we enjoy making this bruschetta toast include:

  • Simple ingredients. This simple toast is made with basic ingredients you will typically already have on hand.

Vegan Changes for Bruschetta Toast

Honestly, at the base level this recipe is vegan. There are a few things to keep in mind when picking up the ingredients such as:

  • Bread– Be sure to check the ingredient label to make sure you are selecting a vegan loaf of bread.
  • Omit any cheese– Many variations of bruschetta include mozzarella or parmesan. This recipe omits any use of cheese.

  • Bread– The base of these toasts are made with toasted slices of rustic bread.
  • Tomato– Ripe tomato on the vine or Roma tomatoes work wonderfully in this recipe.
  • Olive Oil– Extra virgin olive oil works well in this recipe.
  • Garlic- Fresh minced garlic, I would not recommend subbing this out for a jarred option.
  • Salt– I used Kosher salt to help bring out the flavor of the tomatoes.
  • Basil– Fresh chopped basil adds a delightful flavor to the topping.
  • Balsamic glaze (optional)– Drizzled on the top for an acidic finish.

Step-by-Step Directions for Vegan Bruschetta

  • Slice bread into 1/2 -inch thick slices.
  • Toast: Place the bread in the toaster or in the oven and toast to your desired level of crispiness.
  • Dice tomato: While the bread is toasting, chop tomatoes into 1/4 inch cubes.
  • Stir together: In a medium bowl, stir together chopped tomatoes, minced garlic, olive oil, salt, and fresh basil.
  • Top: Spoon the tomato mixture over the toasted bread.

Yes. The best way to prep in advance for this recipe would be to make the topping and store it in the refrigerator up to 1 day ahead of serving. Then when you are ready to serve and assemble you simply toast the bread and spoon the bruschetta on top.

I would recommend using a loaf of Italian bread or French bread.

  • 3 Tomatoes on the Vine
  • 1 Tablespoon Olive Oil
  • 1 clove Garlic minced
  • ½ teaspoon Salt
  • 2 Tablespoons Fresh Basil
  • 1 French or Italian Bread Loaf
  • Balsamic Glaze to finish

Instructions

  1. Slice loaf of bread into 1/2 -inch thick slices.
  2. Place the bread in the toaster or in the oven and toast to your desired level of crispiness.
  3. While the bread is toasting, chop 3 tomatoes on the vine into 1/4 inch cubes.
  4. In a medium bowl, stir together chopped tomatoes, 1 clove minced garlic, 1 Tablespoon olive oil, ½ teaspoon salt, and 2 Tablespoons fresh basil.

  5. Spoon the tomato mixture over the toasted bread.
  6. Drizzle with balsamic glaze and enjoy!
