Vegan Boursin Pasta

Creamy and comforting, this vegan Boursin pasta makes a delicious dairy-free grown up mac and cheese. Made with a creamy garlic and herb sauce, this simple recipe comes together in under 30 minutes for a quick weeknight dinner.

Ingredients

  • 8 ounces Pasta
  • 4 Tablespoons Plant Based Butter or Olive Oil
  • 4 Cloves Garlic, minced or grated
  • 2 Tablespoons Flour, all purpose
  • 1 ½ cup Full Fat Coconut Milk or Heavy Cream Alternative
  • 6 ounces Dairy-Free Boursin Cheese
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper

Instructions

  1. Bring a pot of water to boil.
  2. Once boiling, generously salt the water.
  3. Add the pasta and cook according to the package directions. Each type of pasta will have different cook times so you will want to make sure you keep an eye on the pasta while making the sauce.
  4. Once cooked, drain and set to the side until the creamy Boursin sauce is finished.
  5. In a large skillet, melt plant butter and add garlic. Stir until fragrant.
  6. Whisk in flour and cook until lightly golden.
  7. Slowly whisk in the coconut milk, or heavy cream alternative. Cook to thicken, about 2-3 minutes.
  8. Once thickened, add the dairy-free Boursin and stir until fully melted into the sauce.
  9. Add the cooked pasta to the large skillet and season with salt and pepper.
  10. Cook for about 2-3 minutes or until the sauce is your desired consistency.
