Recipes we Made This Week

Probably my favorite dinner this week came from being #influenced after seeing How Sweet Eat’s Spaghettio’s on Instagram, we whipped up a skillet of them using a mix of shells and ditalini pasta and couldn’t have been happier. We also omitted the baked manchego cheese on top because… dairy…

Also on the menu this week we had this Vegan Ramen Stir Fry from The Stingy Vegan. I doubled the zucchini, bell pepper, broccoli and sauce as well as threw in some shrimp to add some extra protein.

CURRENTLY READING

My morning reading routine includes a non-fiction, get-your-shit together kind of book + reading and journaling from The Daily Stoic and then I end my days with a fiction book before bed.

My current morning book is Girl Wash Your Face by Rachel Hollis. I know… I really should be finished with this one but I stopped my morning reading and now will have to find a different time in the day to get this one done.

For my fiction book, I am reading The Historian by Michael Peron.
