Welcome to the Sunday Smorgasbord Vol. 5, where you can get up to date on the new recipes on the blog, recipes shared 1 year ago today, the recipes we made or adapted this week, and the books I am currently reading.

This week brought about many challenges to my family in Texas and Louisiana. They lost power and water, found themselves displaced, experienced burst pipes and uncertainty not knowing when they would have power or safe water again.

New Recipes On My Life After Dairy

Minestrone Soup– A hearty, vegan version of Olive Garden’s classic soup.

Homemade Coconut Granola- Crunchy granola with shredded coconut perfect for a morning bowl of yogurt or a drizzle of plant-based milk.

Recipes I Made or Adapted this Week

BBQ Chicken Pizza- We used the crock pot BBQ Chicken from last week to make a delicious pizza. I made the pizza dough recipe from Half Baked Harvest’s Super Simple Cookbook, topped it with a layer of bbq sauce then sprinkled shredded chicken, caramelized onion, and Violife shredded cheddar cheese. We ate the entire pizza in one sitting. 10/10 would make again.

Frito Chili Pie- There is nothing I love more in the winter than a hearty chili. Growing up my mom would serve her chili with Fritos and shredded cheese. I took the Pioneer Woman’s Frito Chili Pie and served it over a bed of salty Fritos, sprinkled with Violife shredded cheddar cheese and some green onion. We ate this for dinner and lunches pretty much all week.

Lemon Chicken Marinade- I am usually guilty of letting chicken go bad and this week I won the game of chicken by marinating it in this Lemon Chicken Marinade from Fit Foodie Finds. After marinating, we baked the chicken and served it up for lunches with side salads.

Taco Cups- We were planning on making some Turkey Enchiladas this week but I never got around to it so instead I made some delicious taco cups that will hopefully show up on the blog next week- unless I can’t find time to get my life together and such…

Currently Reading

My morning reading routine includes a non-fiction, get-your-shit together kind of book + reading and journaling from The Daily Stoic and then I end my days with a fiction book before bed.

My current morning book is Girl Wash Your Face by Rachel Hollis. I enjoy the easy to read chapters with actionable steps at the end of each chapter.

For my fiction book, I am reading The Historian by Michael Peron. Around halfway through the book, a HUGE plot twist hit and I had to stay up longer to read on and see what would happen next. I love when that happens in a book!
