I have noticed time and again New Years resolutions often bring people back into the kitchen. They either want to learn how to be a better cook, start making more meals at home, or make healthier choices with the meals they already make.

One of the best ways to ensure you stay on track with getting back into the kitchen to make healthy homemade meals is making time to prep multiple meals at a time, also called meal prep.

By batching together a few recipes you can easily whip up healthy options for breakfast, lunch, and dinner that make it easier for you to stick to your New Years goals.

When it comes to meal prep time, using the air fryer to batch egg bites or hard boiled eggs frees up my oven for longer bake items like peanut butter oatmeal bars.

I could list a hundred reasons why we love these egg bites but the simple ease of being able to make a batch of bites in advance to enjoy all week long simply can’t be beat.

  • Flavorful. I love the flavor pairing of spinach, feta, and sun dried tomatoes.
  • Versatile. You can eat the bites as is, spread on toast, wrapped into tortillas, the list is truly endless.
  • Quick air fry time. Each batch of egg bites whips up in just 7 minutes making it easy to whip up a few batches for the week.

Dairy-Free Changes to Spinach and Feta Egg Bites

Two main ingredients keep this recipe deliciously dairy-free.

  • Plant-based heavy cream. To whip the egg mixture and keep the egg bites soft and spongy I recommend using a heavy cream alternative like Country Crock or Silk.
  • Dairy-free feta crumbles. I have been a little (okay, a lot) obsessed with Follow Your Heart dairy-free feta crumbles over the last year and have used them as a feta replacement in a number of recipes.

How to Make Spinach, Feta, and Sun Dried Tomato Egg Bites

Ingredients You’ll Need

  • Eggs– I would say pick your favorite eggs to make this egg bites, for me it’s whatever eggs I have on hand.
  • Heavy Cream Alternative– Adds moisture and volume to the egg bites base.
  • Seasoning– A mix of salt and pepper boost the flavor.
  • Garlic– Fresh minced or grated garlic adds another boost of flavor.
  • Fresh spinach– Stems trimmed and chopped into small bites.
  • Feta– Use a dairy-free crumbled feta for these egg bites.
  • Sun dried tomatoes– I like using a pre cut sun dried tomato to make it easier to chop these into bite sized pieces.

Step-by-Step Directions for Spinach, Feta, and Sun Dried Tomato Egg Bites

  • Make egg mixture: In a large liquid measuring cup whisk together eggs, heavy cream alternative, salt, pepper, and minced garlic.
  • Prepare molds: Next, spray the egg bites mold with non-stick spray.
  • Add mix ins: Sprinkle spinach, chopped sun dried tomato, and crumbled feta into the bottom of each of the egg bite molds. I do about a pinch of each.
  • Pour the egg mixture over the spinach, tomato, and feta filling the egg molds about 3/4 of the way full.
  • Preheat the air fryer to 340°F and set the cook time to 7 minutes.
  • Cook: Once the air fryer has preheated, place the egg bite mold into the air fryer and cook for the full 7 minutes.
  • DO NOT turn or rotate the egg bites at the halfway point.
  • Remove: After 7 minutes, remove the egg bites from the air fryer (I used a large spatula to lift the mold out of the air fryer and place on a trivet to cool while I cook the second batch of egg bites).
  • Cool: Allow to cool about 2-3 minutes before removing from the mold and enjoying.

  • Air fryer– Used to cook the egg bites quickly and without turning on the oven.
  • Large liquid measuring cup– Perfect for mixing the egg filling and using the pour spout to evenly pour the eggs into the molds.

Storing and Reheating These Egg Bites

I think these egg bites make a great make ahead breakfast. Since they are quick to prep, you can easily whip these up during your weekly meal-prep routine.

  • Storing– Allow the egg bites to cool completely before placing in an air-tight container. Refrigerate for up to 5 days.
  • Reheating– Place desired amount on a plate and heat in the microwave. I find 45-60 seconds to be the sweet spot in our microwave. If you have a more powerful microwave, you might want to back it down to 20-30 seconds and add more as needed.

Ingredients

  • 6 Eggs
  • 3 Tablespoons Heavy Whipping Cream Alternative
  • ¼ teaspoon Salt
  • teaspoon Pepper
  • 1 clove Garlic minced or grated
  • 1 cup Fresh spinach
  • 2 Tablespoons Dairy-free feta crumbled
  • 2 Tablespoons Sun Dried Tomatoes minced

Instructions

  1. In a large liquid measuring cup whisk together 6 eggs, 3 Tablespoons heavy cream alternative, ¼ teaspoon salt, ⅛ teaspoon pepper, and 1 clove minced garlic.

  2. Remove the stems from your spinach and mince the spinach into a fine pile.

  3. Next, spray the egg bites mold with non-stick spray.
  4. Sprinkle spinach, chopped sun dried tomato, and crumbled feta into the bottom of each of the egg bite molds. I do about a pinch of each.
  5. Pour the egg mixture over the spinach, tomato, and feta filling the egg molds about 3/4 of the way full.
  6. Preheat the air fryer to 340°F and set the cook time to 7 minutes.
