12–13 Graham Crackers
1 cup Brown Sugar
½ cup Vegan Butter
1 tablespoon Vanilla
1 pinch Salt
2 bags Chocolate Chips (dairy-free)
1 bag Marshmallows
Instructions
Preheat oven to 400°F and line a 9X13-inch baking sheet with foil.
Spray the foil with non-stick spray then line it with a layer of roughly 12-13 graham crackers.
In a small saucepan melt ½ cup plant-based butter and 1 cup brown sugar. Bring to a boil and let for 3 minutes without stirring. Remove the saucepan from the heat and stir in 1 Tablespoon vanilla.
Pour the toffee over the graham cracker layer and spread with a rubber spatula to coat the graham crackers. Bake in preheated oven for 5 minutes.
Remove the baking sheet from the oven and top with 20 ounces chocolate chips. Bake for 2 minutes. Remove from the oven and spread the chocolate into a thick layer.
Top with 8-10 ounces marshmallows. You will not use the full bag, just cover the chocolate topping with marshmallows. Broil for 1 minute- 1 minute 30 seconds. Keep an eye on it as it will burn quickly.
Cool completely (you might even want to pop it into the freezer to allow it to set fully) then chop into bite-sized pieces.
