S’mores Toffee

Summer is calling with this chocolaty S’mores Toffee! Layers of graham cracker, dairy-free toffee, melted chocolate, and marshmallows give you all of the flavor of a fire-roasted s’more from the comfort of your kitchen.

With summer just around the corner, s’mores are calling my name! Seriously, what’s not to love about the combination of crispy graham crackers, melty chocolate, and gooey roasted marshmallows?? Unfortunately, I am not always in the mood for making a fire in the backyard and I might be little too chicken to roast a marshmallow over the burners in my kitchen…

My solution to this dilemma was simple, mix all the flavors of s’mores into a hand-held, fire-free treat! After tackling Chocolate Peanut Butter Toffee, I knew a new s’mores-inspired toffee would do perfectly! After a few rounds of marshmallows burning in the oven (not the worst smell to come out of the kitchen…) I nailed down the perfect balance between toasted marshmallows, thick chocolate, and crispy graham crackers.

Why We LOVE This Toffee

If the word s’mores didn’t get you up and into the kitchen, here are a few reasons we absolutely love this toffee!

  • Hand-held s’mores without the mess- Since it all bakes up in the oven, you don’t have to roast your marshmallows or get any gooey mess when enjoying the toffee.
  • No fire needed- Pop them in the oven and crank up the broiler for a final torched top.
  • S’mores on demand– Once you’ve whipped up a batch of this toffee you can enjoy the flavor of s’mores for days!

How to Make S’mores Toffee

Ingredients You’ll Need

  • Graham crackers- This is the base of the s’mores toffee.
  • Toffee- A homemade dairy-free toffee made from plant-based butter, brown sugar, vanilla, and a pinch of salt.
  • Chocolate- Dairy-free chocolate chips such as Enjoy Life Semi-Sweet Chocolate Chips or Simple Truth Organic Vegan Chocolate chips will work perfectly in this toffee!
  • Marshmallows– For that gooey s’mores finish, mini chocolate chips add the perfect touch!

Directions to Make S’mores Toffee

  • Prepare for baking: Preheat oven to 400°F and line a 9X13-inch baking sheet with foil.
  • Spray the foil with non-stick spray then line it with a layer of graham crackers.
  • Make toffee: In a small saucepan melt plant-based butter and brown sugar. Bring to a boil and let cook for 3 minutes without stirring. Remove the saucepan from the heat and stir in vanilla.
  • Pour + Spread Toffee: Pour the toffee over the graham cracker layer and spread with a rubber spatula to coat the graham crackers. Bake in preheated oven for 5 minutes.
  • Add chocolate: Remove the baking sheet from the oven and top with chocolate chips. Bake for 2 minutes. Remove from the oven and spread the chocolate into a thick layer.
  • Top with marshmallows. You will not use the full bag, just cover the chocolate topping with marshmallows. Broil for 1 minute- 1 minute 30 seconds. Keep an eye on it as it will burn quickly.
  • Cool completely (you might even want to pop it into the freezer to allow it to set fully) then chop into bite-sized pieces.

Here are a few tools you might need while making these oven-baked s’mores bars.

  • Rimmed 9×13-inch Cookie Sheet– The low rimmed edges of this cookie sheet make it perfect for removing the toffee from the pan.
  • Whisk- Great for mixing the vegan butter, brown sugar, and vanilla.
  • Oven Mitts– For taking the s’mores in and out of the oven for each different layer.

Dairy-Free Changes to S’mores Toffee

Vegan Options

Looking to turn this into a delicious vegan treat! Here are a few ingredient swaps to make this S’mores toffee a vegan dessert.

  • Graham Crackers- Make sure to use a graham cracker made without honey such as the Nabisco Original Grahams
  • Marshmallows- Top with a vegan marshmallow such as Dandies.

Storing!

Keep these s’mores toffee pieces in an airtight container at room temperature for up to 7 days!

Ingredients

  • 12-13 Graham Crackers
  • 1 cup Brown Sugar
  • ½ cup Vegan Butter
  • 1 tablespoon Vanilla
  • 1 pinch Salt
  • 2 bags Chocolate Chips dairy-free
  • 1 bag Marshmallows

Instructions

  1. Preheat oven to 400°F and line a 9X13-inch baking sheet with foil.

  2. Spray the foil with non-stick spray then line it with a layer of roughly 12-13 graham crackers.

  3. In a small saucepan melt ½ cup plant-based butter and 1 cup brown sugar. Bring to a boil and let for 3 minutes without stirring. Remove the saucepan from the heat and stir in 1 Tablespoon vanilla.

  4. Pour the toffee over the graham cracker layer and spread with a rubber spatula to coat the graham crackers. Bake in preheated oven for 5 minutes.

  5. Remove the baking sheet from the oven and top with 20 ounces chocolate chips. Bake for 2 minutes. Remove from the oven and spread the chocolate into a thick layer.

  6. Top with 8-10 ounces marshmallows. You will not use the full bag, just cover the chocolate topping with marshmallows. Broil for 1 minute- 1 minute 30 seconds. Keep an eye on it as it will burn quickly.

  7. Cool completely (you might even want to pop it into the freezer to allow it to set fully) then chop into bite-sized pieces.
