Let me be real with you, these peppermint bark rice krispie treats are without a doubt the shining example of “influenced”. I was scrolling the gram during the holiday hustle and bustle when I stumbled upon Joy and Oliver’s White Chocolate Peppermint Rice Krispie Treats. I knew the second I saw them, I had to make them! Except I’m not a huge fan of white chocolate so I subbed in some semi-sweet chocolate, added crushed peppermint into the rice krispie base, and there you have it! #influenced
These chewy, crispy treats are kissed with peppermint and topped with a delicious chocolate peppermint bark similar to my vegan peppermint bark recipe (sans the white chocolate layer). They are perfect for packing, stacking, shipping, sharing, or not sharing- I won’t judge!

How to Make Peppermint Bark Rice Krispie Treats
Ingredients
For the Rice Krispie Treats:
- Plant-based Butter– melted to liquid gold perfection.
- Marshmallows– A bag of mini marshmallows shall work excellently but you can also use the large marshmallows, they just might take a little longer to melt into gooey deliciousness.
- Rice Krispie Cereal– can you even make rice krispie treats without the rice krispie cereal?!?
- Crushed Peppermint- Apparently you can buy crushed peppermint at the store, but if you, like me, have not been able to find it you can simply crush candy canes. 3 should do.
For the Peppermint Bark Topping:
- Dairy-free Chocolate Chips– for melting and topping the peppermint rice krispies with.
- Coconut Oil– melted with the dairy-free chocolate chips.
- Peppermint Extract– stirred into the melted chocolate to make the peppermint bark topping a little more pepperminty.
- Extra Crushed Peppermint– for topping the chocolate topping the treats!
Directions
- Melt plant-based butter: In a large pot melt plant based butter over medium-low heat.
- Add marshmallows: Once the vegan butter melts add the mini-marshmallows and cook until mostly melted.
- Remove from heat until marshmallows are completely melted.
- Add cereal and peppermint: Stir in rice krispie cereal and crushed peppermint pieces.
- Pour and press: Pour the peppermint rice krispie treats into a parchment lined square baking dish and press into the pan.
- Cool and cut: Allow the rice krispie treats to cool before cutting into squares or triangles or whatever shape your little heart desires.
- Once the peppermint rice krispies have been cut prep the peppermint bark topping.
- Melt chocolate: In a small bowl melt simi-sweet chocolate chips with coconut oil. Once smooth, add peppermint extract.
- Dip the tops of the rice krispie treats into the peppermint chocolate and sprinkle with crushed candy canes or peppermints and nom away!
Dairy-Free Changes to Rice Krispie Treats

- Replace butter with a vegan or plant-based butter. I often use Country Crock Plant Butter to replace my butter needs.

How to Make these Rice Krispie Treats Vegan
Two major swaps from this recipe will make these treats vegan.
- Use vegan marshmallows. I have used Dandie’s Vegan Marshmallows time and time again with rice krispie treats and have not once been let down.
- Use a vegan rice krispie cereal. Unfortunately Kellogs’ Rice Krispie Cereal is not vegan but you can replace it with an option like 365 Cereal Brown Rice Crisps.
Helpful Kitchen Tools
When you decide to whip up a batch of these peppermint bark rice krispie treats, here are some helpful kitchen tools you might want to use.
- 8×8-inch square pan– The sharp corners on this non-stick baking pan make for a crisp finish on all of the treats.
- Rubber spatula– Perfect for stirring the marshmallows into the melted vegan butter as well as pressing the rice krispie treats into the pan.
- Pre-crushed Candy Cane– This will save you time and heart-ache by having already crushed candy cane ready to go!

Ingredients
Peppermint Rice Krispies
- ½ cup Plant Based Butter
- 10 ounces Mini Marshmallows
- 6 cups Rice Krispie Cereal
- ¼ cup Crushed Peppermint
- 1 pinch Salt
Peppermint Bark Topping
- 1 cup Dairy-free Chocolate Chips
- 1 teaspoon Coconut Oil
- ¼ teaspoon Peppermint extract
- Crushed Peppermint to top the treats
Instructions

In a large pot melt ½ cup plant based butter over medium-low heat.

Once the vegan butter melts add 10 ounces mini-marshmallows and cook until mostly melted. Remove from heat until marshmallows are completely melted.

Stir in 6 cups rice krispie cereal, ¼ cup crushed peppermint pieces, and a pinch of salt.

Pour the peppermint rice krispie treats into a parchment lined square baking dish and press into the pan. Allow the rice krispie treats to cool before cutting into squares or triangles or whatever shape your little heart desires.
