After our son was born, I found myself scarfing down everything in my path. From granola bars to lactation cookies, to freezer breakfast burritos and more! After my stash of pre-made snacks ran dry, I needed a snack recipe that I could quickly and easily make during nap time that could keep me fueled for the busy days of newborn life.

My peanut butter chocolate chip lactation bites made the perfect no-bake recipe to whip up between wake windows and honestly I’ve been making them non-stop since our daughter was born. With a few weeks under our belts as a family of four, I’ve had some time to make a few changes to the original lactation bites recipe and thus these almond joy bites were born.

My personal experience with recipes and teas for boosting milk supply have all been positive but I have never measured to compare the weeks I consume lactation bites and other lactation boosting snacks with the weeks I do not consume lactation snacks.   • Old-Fashioned Oats– Iron rich oatmeal helps promote the production of breast milk.
  • Ground Flax Seed– Made from ground flaxseeds, this contains phytoestrogens (AKA dietary estrogens) which are structurally similar to estrogen produced by the body and have the potential to have effects similar to estrogen.

Additional Ingredients to Almond Joy Lactation Bites

In addition to the milk boosting ingredients of brewer’s yeast, old-fashioned oats, and ground flax seed, this recipe also contains:

  • Almond butter
  • Maple syrup
  • Water
  • Shredded coconut
  • Chocolate chips

How to Make Vegan Almond Joy Lactation Bites

  • Mix flax and water: In a small bowl mix together ground flax and water. Allow mixture to sit 5 minutes. I like to measure out the other ingredients while the flax and water set.
  • Stir ingredients together: In a medium sized mixing bowl stir together old-fashioned oats, almond butter, maple syrup, brewer’s yeast, shredded coconut, the ground flax mixture, and chocolate chips.
  • Refrigerate: Cover the bowl with plastic wrap and refrigerate at least 1 hour.
  • Roll balls: Scoop and roll into 1-inch sized balls.
  • Top with coconut and chocolate: Roll into shredded coconut and drizzle with melted vegan chocolate.

Storing and Freezing Healthy Lactation Bites

Once rolled and ready, here are the best ways to store your vegan lactation bites.

  • Refrigerator- Keep chilled in an airtight container or ziplock bag for up to 1 week in the refrigerator.
  • Freezer– For longer storage or to meal prep these lactation bites before your due date follow the recipe and roll into balls. Store the balls in a freezer-safe container or ziplock bag for up to 3 months.
  • Thawing– When you are ready to dive into these healthy snack bites, simply remove the desired amount from the freezer and transfer to the refrigerator in an airtight container for up to 1 week.

Ingredients

  • 2 Tablespoons Ground Flax
  • 2 Tablespoons Water
  • 1 cup Old Fashioned Oats
  • ¼ cup Almond Butter
  • ¼ cup Maple Syrup
  • 1 Tablespoon Brewer's Yeast
  • 2 Tablespoons Shredded Coconut (plus more to garnish)
  • ¼ cup Vegan Chocolate Chips

Instructions

  1. In a small bowl mix together 2 Tablespoons ground flax with 2 Tablespoons water. Allow mixture to sit 5 minutes.

  2. In a medium sized mixing bowl stir together 1 cup old-fashioned oats, ¼ cup almond butter, ¼ cup maple syrup, 1 Tablespoon brewer's yeast, 2 Tablespoons shredded coconut, the ground flax mixture, and ¼ cup chocolate chips.
