Funfetti Rice Krispie Treats

Chewy, colorful, rice krispie treats make the perfect dairy-free dessert to indulge in no matter what you want to celebrate. These Funfetti Rice Krispie Treats are a colorful, flavor bursting dessert you will want to make time and time again.
Sometimes I get these cravings for food I don’t have. Actually it’s almost always food I don’t have or can’t easily make. Maybe that’s what makes the cravings so intense. Anything short of what I am craving simply won’t suffice.
These rice krispies came about from one of these cravings. I was at the gym and suddenly knew that if I didn’t make rice krispie treats I would go home and consume everything in the house remotely close to rice krispie treats and then continue to crave them until I finally made actual rice krispie treats. Giving into the craving, as I typically do… I left the gym and went to the grocery store because of course I knew I didn’t have ONE SINGLE INGREDIENT to make these.
While meandering the isles my mind began dreaming of ways to make a variation of rice krispie treats that was a little different from the run of the mill batch. Don’t get me wrong, I love a basic rice krispie treat, but sometimes you need to dress it up a little and that is where the sprinkles came in. When I got back from the store I began digging through my cabinets for multicolor sprinkles.
While digging, I found a big jar of rainbow sprinkles AND a bottle of almond extract. I love how almond extract basically smells like wedding cake. After a huge whiff of the extract I thought maybe by adding it into the rice krispies they would taste like cake…. spoiler alert, they do! With the rainbow sprinkles added to the mix, this variation of rice krispies basically tastes like a cake without waiting for it to bake in the oven!
How to Make Dairy-Free Rice Krispie Treats
In a tall stainless steel pot, 1/2 cup pour melted coconut oil in and heat on medium low heat for about 2 minutes. Add a 10 oz bag of marshmallows to the pot and heat until melted. Stir the marshmallows and coconut oil together gently so you don’t splash the coconut oil out of the pot. (Learn from my mistakes y’all)
Once the marshmallows and coconut oil and melted together and completely combined, remove from heat. Add 1 teaspoon almond extract and 1/4 teaspoon flaky sea salt. Stir until combined.
Pour 6 cups of Rice Krispie Cereal into the melted marshmallow mixture and stir to combine. Really scrape the bottom of the pan to make sure all of the marshmallow gets mixed into the treat!
After the marshmallow mixture is thoroughly mixed into the cereal and the mixture has cooled a bit add 1/2 cup rainbow sprinkles into the pot, quickly mix the sprinkles into the mix and pour the finished mixture into a 9×9 square baking pan. Press and allow to cool.
Once cooled, cut into 16 squares and enjoy!
Why do you wait before putting the sprinkles in?
Those beautiful, colorful sprinkles make the most adorable rice krispie treats! But, some people might not know that sprinkles are actually made almost entirely out of sugar. When sugar gets hot, it melts! So allowing the mixture to cool allows the sprinkles to stay in that adorable shape (sort of) and keep their unique colors.
Dairy-Free Changes to Rice Krispie Treats
The biggest dairy-free change to a rice krispie recipe is swapping out the butter for coconut oil. Additionally you can use a vegan butter as a dairy free replacement.
VEGAN AND GLUTEN-FREE SWAPS
You know I am ALL about the dairy-free life here, but I also recognize there are plenty of people who follow a dairy-free diet in conjunction with other diet plans so here are a few swaps you can make in the recipe to stick to a vegan or gluten-free diet.
VEGAN– Swap the marshmallows out for a vegan marshmallow such as Dandies.
GLUTEN-FREE– Swap the Rice Krispies for the gluten-free rice krispies cereal or try Nature’s Path Organic Crispy Rice, which is gluten-free.

Funfetti Rice Crispy Treats
These coconut oil funfetti rice crispy treats are the gooey rice crispies you love with a cake like flavor!
Ingredients
- ½ c. Coconut Oil melted
- 10 oz. Marshmallows a bag will do
- 1 tsp. Almond Extract
- ¼ tsp. Falky Sea Salt
- 6 c. Rice Crispy Cereal
- ½ c. Rainbow Sprinkles
Instructions

In a large stainless steel pot heat together melted coconut oil and marshmallows on medium low heat.

Stir occasionally until marshmallows begin melting. Carefully stir until the marshmallows are completely melted and mixed into the coconut oil.

Remove from heat and stir in the almond extract and the flaky sea salt.

Next add the rice crispy cereal stirring to coat all of the cereal with that gooey marshmallowy goodness.

Then allow the mixture about 3 minutes to cool before adding the rainbow sprinkles. Stir the sprinkles in and pour the mixture into an 8X8 baking dish and allow the treats to cool and set before cutting into them.

Cut into 16 squares. These are BIG squares so if you are looking to make them smaller you can cut those squares in half.
