Savory, flaky, and vegan, these everything bagel scallion biscuits are the perfect addition to your morning! Loaded with fresh chopped green onion and topped with everything bagel seasoning these biscuits made an excellent breakfast sandwich or go great with a side of eggs and a schemer of dairy-free cream cheese.
Buttery, flaky, packed with flavor, these biscuits have it all. If there is something I think we could all use a little more of in life, it is biscuits. Buttermilk biscuits with a drizzle of honey, garlic and herb biscuits with a side of bacon and eggs, or these Everything Bagel Scallion Biscuits with a schemer of dairy-free cream cheese and an extra sprinkle of everything bagel seasoning.
These biscuits came out of a typical breakfast craving at our house- everything bagel sandwiches- specifically from Macon Bagels but since I wasn’t prepared to wake a sleeping baby to pack everyone up and go to get breakfast sandwiches, I decided to try my hand at a new biscuit flavor and I am quite chuffed with the results.
Why We Love these Biscuits
- Ultra-flaky. The process of cutting the butter into the flour mixture results in the ideal flaky biscuit.
- Tender. With a vegan “buttermilk” mixture, these biscuits are soft enough to melt in your mouth, but sturdy enough to convert into a breakfast sandwich.
- Flavorful!– The base of the biscuit is flavored with fresh chopped scallions and then topped with the irresistible blend of everything bagel seasoning.
How to Make Everything Bagel Scallion Biscuits
Ingredients You’ll Need
- Dry ingredients: A blend of flour, sugar, baking powder, salt, and baking soda make the base of these homemade biscuits.
- Plant-based butter: Cold vegan butter cut into 1 inch cubes or smaller.
- Green onion: Freshly sliced into small bites for easy mixing into the biscuit dough.
- Everything bagel seasoning: Added into the biscuit as well as on top of the biscuit for double the flavor.
- Non-dairy buttermilk: Made from a blend of non-dairy milk and apple cider vinegar helps keep these biscuits tender.
Directions for Scallion Biscuits
- Prepare for baking: Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper or a silicone baking mat.
- Make buttermilk: In a bowl mix together non-dairy milk with apple cider vinegar to create the “buttermilk”. Let sit for 5-10 minutes before using in the biscuit dough.
- Mix dry ingredients: In a large bowl stir together flour, sugar, baking soda, salt, and baking powder.
- Cut in plant-butter: Next, cut the cold vegan butter into the flour mixture using a pastry blender.
- Add flavor: Stir in the chopped scallions and the everything bagel seasoning.
- Stir in buttermilk: Gradually add the non-dairy buttermilk and stir using a rubber spatula until combined.
- Gently knead: Turn out onto a clean counter a gently knead 3-5 times until dough comes together.
- Cut into biscuits: Shape the dough into a 1 inch thick disk. Using a 3 inch round cutter, cut out 4 biscuits. Bring the scraps together to cut another 2 biscuits.
- Season: Top with additional everything bagel seasoning and place on the rimmed baking sheet.
- Bake for 15-18 minutes or until slightly golden brown and baked through.
Dairy-Free Changes to Everything Bagel Scallion Biscuits
These two swaps take these biscuits to dairy-free nirvana.
- Plant-based butter: I swapped regular butter for a plant-based butter to make these vegan biscuits.
- Dairy-Free Buttermilk: Using a non-dairy milk mixed with apple cider vinegar you can easily swap traditional buttermilk for this dairy-free alternative. I used oat milk in this recipe as I find it doesn’t add too much additional flavor to the biscuit dough.
