Easy Chicken Salad

This easy chicken salad, with basic ingredients, is simple to make and enjoy for days! This recipe can be Whole30, paleo, and dairy free. In ten minutes you will have a filling and flavorful chicken salad, perfect for lunches, wraps, topping on a leafy green salad, or simply scooped on crackers.

I went overboard on healthy meal prep, again. When it is time to eat clean I buy everything and make more food than I know what to do with. One of the dishes I over make is my oven baked chicken and this round of clean eating was no different. I am sitting with chicken breasts in addition to meatballs, steak, salmon, 3 different kinds of lettuce, zucchini, cucumber, celery, carrots, apples, bell peppers, sweet potatoes, grapes and bananas in my kitchen. There are 2 people in this house and I don’t think we will come anywhere close to eating all of this food in a week.

I think I do this because I don’t like to eat the same meal twice. My husband could eat chicken and veggies every day and be perfectly content with it but I had chicken and veggies and now I want something different. Cue salads. Whenever I have left over meats I like to make them into a salad. It is a different take on the same meal but is just different enough that I can be tricked into eating it.

Chicken Salad

Easy, dairy free and Whole30 chicken salad that can be whipped up in no time. Goes great on a bun, cracker, and on top of a bed of mixed greens.

Ingredients

  • 1 Cooked Chicken Breast large
  • 2 Celery stalks
  • ½ Red Onion Diced
  • ¼ c. Mayo
  • 1 tsp. Lemon Juice
  • ½ tsp. Garlic Powder
  • ½ tsp. Onion Powder
  • ¼ tsp. Salt
  • ¼ tsp. Pepper

Instructions

  1. Chop the chicken into small cubes, dice the onion, and chop the celery into small bites.

  2. In a bowl stir together chicken, onion, celery, mayo, and lemon juice.

  3. Season with garlic powder, onion powder, salt, and pepper.

  4. Serve immediately or pop into the fridge to let the flavors marry.
