Fluffy double chocolate chip pancakes start your morning off with a deliciously dairy free chocolaty treat!

Before we dive head first into these decadent pancakes, I’d like to share how they came about in the first place.

If you know me, you know my affinity for checking out books at the library. I believe if you truly love a book, you will buy it and read or treasure it forever. How do you know you love a book before reading it though? Not every book you read is a winner, in fact, some are a real drag. Some you don’t even read after the first 100 pages because your time and life are worth more to you than pushing through a book you don’t like. Now imagine if you invested $10-$15 into that book, you might feel more inclined to waste your time and slowly push through the book.

On the other hand, imagine you checked it out from the library, you read the first 100 pages and made the decision to stop because it was not the book for you. You can return the book, no money and little time wasted, and find a new one. Now I recognize the flaws with this philosophy. Many libraries have long wait times for digital downloads of new books or they might not carry the book you are looking for. Or your OCD tendencies may be crying out in agony at the mere thought of discarding a book prior to completion.

These are real, first world problems, but I truly believe the cost and time saving benefits alone are reason enough to get a card and go to the library!

Great rant Annie, but what about the pancakes?

One snowy day I found myself meandering through the Cookbook section of the Library. (see what I did there?) On this occasion I picked up 5, yes you read that correctly, FIVE cookbooks in addition to whatever Outlander book I was on at the time and happily headed home. Over the days I leafed through the cookbooks but the one I went back to time and again was Brunch @Bobby’s.

My love of breakfast is no secret, in fact I am currently eating breakfast for an evening snack, hello leftover dairy free buttermilk pancakes! What shocked me as I read through Bobby’s brunch cookbook was how many recipes I could see myself making and enjoying. Often only one or two recipes from a given cookbook will stand out as particularly appealing to me, but in this case page after page called to me until I caved and made these delicious pancakes.

Pro-Tips for Double Chocolate Chip Pancakes

-Allow non-dairy buttermilk to come to room temperature. This prevents the coconut oil from re-solidifying when you mix it in.
Allow coconut oil to cool off before using or it will re-solidify when mixed into the batter.
-Give batter time to rest before you begin baking the pancakes.
Watch the pancakes closely. Chocolate often makes it difficult to tell when something is done or burnt.

Dairy Free Changes to Double Chocolate Pancakes

-Use non-dairy buttermilk in place of regular buttermilk.
-Replace melted butter with melted coconut oil. If you have a tree nut allergy you can swap for a melted plant based butter.
Replace chocolate chips with a non-dairy version.

Double Chocolate Chip Pancakes

For a decadent breakfast, make these deliciously dairy free double chocolate chop pancakes!

Ingredients

  • c. Unsweetened Cocoa Powder sifted
  • c. Flour sifted
  • 2 tsp. Baking Powder
  • ¼ tsp. Sea Salt
  • 2 Eggs room temperature
  • 2 Tbsp. Sugar
  • 2 Tbsp. Brown Sugar
  • 1 c. Non-dairy Buttermilk room temperature
  • 3 Tbsp. Coconut Oil melted and slightly cooled
  • 2 tsp. Vanilla
  • 1 c. Non-dairy chocolate chips

Instructions

  1. In a medium mixing bowl, whisk together unsweetened cocoa powder, flour, baking powder, and sea salt.

  2. In a small bowl, whisk together eggs, sugar and brown sugar, non-dairy buttermilk, coconut oil, and vanilla.

  3. Pour the wet ingredients into to the dry and whisk until smooth.

  4. Fold the chocolate chips into the batter and allow the batter to rest roughly 10 minutes.

  5. Meanwhile, grease and heat a non-stick pan on medium heat.

  6. Measure ¼ cup of batter into the the pan and cook for about 2 minutes or until bubbles form. Flip and cook an additional 1-2 minutes. Remove from the skillet and store in a warm oven until you are ready to serve.

Recipe Notes

Swap coconut oil for melted plant based butter if you are looking for a tree nut free option. 

If your oven does not have a warm setting, simply heat the oven to 200 F (or as low as it goes) then shut the oven off when you begin adding pancakes on an oven safe dish or pan.
