It pains me to say that this is the first “pizza” recipe on the site when pizza happens to be one of my favorite meals of all time.

This simple pizza quesadilla is a recipe I have been making since I could operate the microwave. What started as a layer of tortilla, pasta sauce, cheese, and a final tortilla has evolved to include toppings, spices, dips and more.

After switching to a dairy-free diet I thought my love affair for pizza would have to end and to be honest for a while it did. I was unimpressed with the dairy-free cheese varieties on the market and opted to eat my pizzas cheese free instead.

In the last year, I have made it a point to try some of the new or revised vegan cheeses on the market and have been pleasantly surprised (lookin at you pourable mozzarella!)

With fresh, meltable, and flavorful vegan options for shredded mozzarella I revisited my childhood classic, pizza-dillas and have loved the different options I can quickly and easily make.

Why We Love Pizza Quesadillas

This quick and easy riff on pizza is on repeat in our home for a multitude of reasons. Some of the main reasons we love these pizzadillas include:

  • Quick to make. They take about 5 minutes to make on the skillet, less in the microwave.
  • Versatile. You can toss a number of different toppings onto these personal tortilla pizzas.
  • Kid approved. It might be considered a win if your toddler will also eat the snack/meal you have prepared.

Dairy-Free Changes to Pizzadillas

The main dairy-free ingredient you will want to consider when making these simple pizza quesadillas is the shredded vegan cheese.

Here are a few of the brands I have tried and like using with this recipe.

How to Make A Pizzadilla

Ingredients You’ll Need

  • Tortillas– I would suggest using a 6-8 inch flour tortilla for this recipe.
  • Marinara– Used as the sauce on the bottom of the pizza quesadilla.
  • Dairy-Free Cheese– I like to use a vegan mozzarella but you can also do a blend of mozzarella, cheddar, or even Parmesan.
  • Oregano– Just a little pinch to add some flavor to the pizzadillas.

Step-by-Step Directions for Pizza Quesadillas

  • Prepare skillet: Depending on the size of your tortilla select a non-stick skillet the tortilla will fit in.
  • Heat the skillet over medium-low heat.
  • Spread marinara sauce over half of the tortilla.
  • Add cheese: Top the sauce with shredded vegan cheese.
  • Season + close: Sprinkle with a little oregano and fold the other half of the tortilla over the top of the shredded vegan cheese like a taco.
  • Cook over medium-low for about 2 minutes, then flip the quesadilla over to the other side and cook another 2 minutes or until the quesadilla is melted through.
  • Remove from skillet and allow to cool a minute or two before slicing and enjoying!

I love how simple these pizza quesadillas are to make. With a few kitchen staple tools you can easily whip up these pizzadillas in no time.

  • Skillet– Used to cook the quesadillas.
  • Spatula– Great for flipping the quesadillas and lifting them out of the pan.

Toppings for a Dairy-Free Pizzadilla

Anything you can put on a pizza feels like fair game for this simple pizza quesadilla. Some toppings we like to include are:

  • Olive slices
  • Peppers
  • Pepperoni
  • Bacon Bits
  • Cooked sausage
  • Mushroom
  • Chorizo
  • Onion

Be sure to add these toppings when you add the cheese and try not to over-top the pizzadilla or they may fall out during cooking.

Pizzadilla Combo Ideas

The original recipe for this simple pizzadilla is vegan. Any modifications that you make with meat products will make this a dairy-free but not vegan recipe.

  • Vegan– 1 Tablespoon marinara, 2 Tablespoons mozzarella, pinch of oregano.
  • Caprese– 1 Tablespoon marinara, 1-2 slices of tomato, 2 Tablespoons mozzarella, 2-3 basil leaves.
  • Pepperoni- 1 Tablespoon marinara sauce, 2 Tablespoons mozzarella, 3 pepperoni, sprinkle of oregano.
  • Supreme– 1 Tablespoon marinara, 2 Tablespoons mozzarella, 1 Tablespoon cooked sausage, sliced bell pepper, olives, and mushroom slices.

I like to think of the pizzadilla as a snack and it needs a good bit of sides to go with it to make it a meal. Here are some simple sides you can make to go with your pizza quesadillas.
