Ready in about 5 minutes, this dairy-free Greek Chicken Quesadilla is a simple and flavorful lunch idea you’ll want to make again and again. This Greek inspired twist on a traditional quesadilla comes together with tortillas, vegan feta, leftover chicken thighs, and Roma tomatoes.
Greek flavored foods are having a moment in our kitchen this year thanks to my new go-to recipe for chicken thighs. We honestly have been making these Greek marinated chicken thighs every other week for a simple and flavorful meal the family loves.
I enjoy having a few left over grilled chicken breasts that I can toss into a wrap, on a salad, or over a hummus bowl. Most recently (around Cinco de Mayo) we added these juicy chicken thighs into a simple quesadilla and our world has been forever changed.

- Vegan feta crumbles– The base of this quesadilla uses vegan feta crumbles in place of a traditional melty cheese to give it a tangy flavor perfect for complimenting the Greek inspired chicken.
How to Make A Dairy-Free Greek Chicken Quesadilla
Ingredients You’ll Need
- Tortillas– Two flour tortillas, homemade or store bought work best in this recipe.
- Vegan Feta Cheese– I used Follow Your Heart Vegan Feta Crumbles for this recipe.
- Greek Chicken Thighs– Leftovers work perfectly in this recipe.
- Roma Tomatoes– Seeded and diced.
Step-by-Step Directions for Dairy-Free Greek Chicken Quesadillas
- Heat a skillet over medium low heat.
- Add tortilla to the pan.
- Sprinkle on the toppings: Sprinkle vegan feta cheese, bits of chicken, and Roma tomatoes over the top.
- Top with remaining tortilla and cook until the bottom tortilla is lightly brown.
- Flip: Using a large spatula, flip the tortilla carefully (to prevent the fillings from falling out).
- Cook about 2-3 minutes or until the bottom is lightly brown.
- Remove from heat and serve.
Notes and Variations for This Dairy-Free Greek Chicken Quesadilla
This is not your traditional quesadilla recipe where you will get that iconic cheese pull. While the vegan feta crumbles will melt a little bit in the cooking process they will not coat/surround/or melt into a traditional cheese texture.
If you want something that will melt around the different toppings simply sub one tablespoon of the vegan feta crumbles for a vegan mozzarella.
Some other toppings you might want to include on this quesadilla include:
- Sliced black or green olives
- Thin sliced red onion
- Sliced peperoncini peppers
- Fresh dill

This dairy-free Greek-inspired twist on a simple chicken quesadilla is made with flour tortillas, juicy chicken thighs, and Roma tomatoes.
Ingredients
- 2 Flour Tortillas
- 3 Tablespoons Vegan Feta Crumbles
- 2 Tablespoons Greek Chicken
- 1 Tablespoon Diced Roma Tomatoes
Instructions

Heat a skillet over medium low heat.

Add one flour tortilla to the pan.

Sprinkle 3 Tablespoons vegan feta cheese, 1-2 Tablespoons chicken, and 1 Tablespoon diced Roma tomatoes over the top.
