Ingredients

Scale
  • 4 slices Bacon (cooked)
  • 6 large Eggs
  • ¼ cup Heavy Whipping Cream Alternative (I used Country Crock Plant Cream)
  • ¼ teaspoon Salt
  • ⅛ teaspoon Pepper
  • 1 clove Garlic (minced or grated on a microplane)

Instructions

  1. Cook 4 slices of bacon until they are your desired level of doneness and place to the side. (You can also make bacon in advance or use left-over bacon for this recipe).
  2. Chop the bacon into bite-sized crumbles.
  3. Spray the egg bite molds and sprinkle the bacon crumbles into the bottom of the molds.
  4. In a large liquid measuring cup, mix 6 eggs, ¼ cup heavy cream alternative, ¼ teaspoon salt, ⅛ teaspoon pepper, and 1 clove minced garlic.
  5. Pour the egg mixture into the prepared molds, filling ¾ of the way full.
  6. Stir to mix the bacon into the egg mixture.
  7. Preheat the air fryer to 340°F and set the cook time to 7 minutes.
  8. Once pre-heated, add 1 of the egg bite molds to the air fryer and cook 7 minutes.
  9. Do not open, rotate, flip, or turn when the air fryer says to turn food, simply allow it to continue to cook until done.
  10. After 7 minutes, remove the egg bites from the air fryer (I used a large spatula to lift the mold out of the air fryer and place on a trivet to cool while I cook the second batch of egg bites).
  11. Allow to cool about 2-3 minutes before removing from the mold and enjoying.
