Cookie Butter Rice Krispie Treats

Crispy, gooey, and dairy-free, this no-bake Rice Krispie treat recipe takes everything you love about the childhood classic (crisp rice cereal + gooey melted marshmallows) and steps it up a notch with cookie butter.

Over the holidays while making cookie butter muddy buddies in excess, I found myself craving alternative treats with cookie butter. It was innocent at first, a little cookie butter on some apple slices or smeared on some bananas. When I began adding it to a melted pot of vegan butter for a Rice Krispie treat experiment, I knew we were on to something good.

The first batch of these cookie butter Rice Krispie treats tasted almost like toffee. You see, when I put the cookie butter into the hot pot with the vegan butter it cooked and caramelized the cookie butter. Instead of leaving the rice krispie treats gooey and cookie buttery, they were tough and dry. Major bummer.

In the second batch I opted to melt the cookie butter with the microwave to prevent over-cooking it. Unfortunately when I poured the cookie butter onto the melted marshmallows, it still left the treats a little caramelized.

Around batch three I left a cereal barrier between the cookie butter and the hot marshmallow mixture. The end result were gooey, chewy Rice Krispie treats with the perfect swirls of cookie butter throughout. Winner-winner-treats for dinner!

How to Make Cookie Butter Rice Krispie Treats

Ingredients You’ll Need

We’re keeping it nice and easy with just a few ingredients to make this dairy-free dessert.

  • Plant-based butter– Vegan butter keeps these treats deliciously dairy-free.
  • Marshmallows– Mini or jumbo marshmallows work well in this recipe.
  • Salt– I like to use flak salt to balance out the sweetness in these treats.
  • Rice Krispie Cereal– Gives crunch and structure to this no-bake dessert.
  • Cookie Butter– I used crunchy cookie butter but you can also use smooth cookie butter to make these treats.

Simple Steps for Rice Krispie Treats with Cookie Butter

These delicious rice krispie treats come together just like traditional rice krispie treats but with an added cookie butter twist.

  • Melt vegan butter: Start by melting the plant based butter in a large pot over medium heat.
  • Add marshmallows: Once melted, add the marshmallows and reduce the heat to medium-low.
  • Melt marshmallows: Stir and mix marshmallows with melted vegan butter until melted.
  • Heat cookie butter: While the marshmallows are melting, heat cookie butter in the microwave for about 30-45 seconds and set to the side.
  • Add salt: Once the marshmallows melt, remove from heat and stir in salt.
  • Pour in cereal: Next, pour the Rice Krispie cereal over the melted marshmallow mixture.
  • Add cookie butter: Pour the melted cookie butter over the Rice Krispie cereal and gently stir to combine.
  • Pour into pan: Turn the cookie butter Rice Krispie mixture out into a prepared 8×8-inch pan.
  • Press and cool: Press the Rice Krispie mixture into the pan and allow to cool before slicing and enjoying.

Dairy-Free Changes

  • Plant-based Butter– I love using Country Crock Plant Butter in place of butter in many recipes. It works just like traditional butter making it a simple and easy swap.
  • Cookie Butter– Check to make sure you are using a dairy-free cookie butter. I used Lotus Biscoff Cookie Butter for this recipe since it contains no dairy.

Ingredients

  • 6 Tablespoons Plant-based Butter
  • 10 ounces Marshmallow
  • ¾ cup Cookie Butter
  • teaspoon Salt
  • 6 cups Rice Krispie Cereal

Instructions

  1. Start by melting 6 Tablespoons plant based butter in a large pot over medium heat.

  2. Once melted, add 10 ounces marshmallows to the pot and reduce the heat to medium-low.

  3. Stir and mix marshmallows with melted vegan butter until melted.

  4. While the marshmallows are melting, heat ¾ cup cookie butter in the microwave for about 30-45 seconds and set to the side.

  5. Once the marshmallows melt, remove from heat and stir in ⅛ teaspoon salt.

  6. Next, pour 6 cups Rice Krispie cereal over the melted marshmallow mixture.

  7. Pour ¾ cup melted cookie butter over the Rice Krispie cereal and gently stir to combine.

  8. Turn the cookie butter Rice Krispie mixture out into a prepared 8×8-inch pan.

  9. Press the Rice Krispie mixture into the pan and allow to cool before slicing and enjoying.
