Chocolate Chip Blondies

Easy, dairy-free, and made in one bowl, these moist chocolate chip blondies are the perfect treat for any occasion. This simple dessert pairs perfectly with a cool glass of oat milk, a scoop of dairy-free ice cream, or a slather of peanut butter.

Over the summer my mom’s side of the family got together for a weekend at the family bay house to say a final goodbye to my grandfather. Since the whole family couldn’t fit at the bay house, my parents rented a condo a few streets over for my sisters, their husbands, and my nephew to stay.

As we were getting ready to go, we noticed the date also corresponded to my older sister and her husband’s anniversary. I asked them if they had any dessert requests that I could bring along for them to celebrate and she immediately responded with blondies.

For the majority of my family, eating dairy is no problem, so I whipped up a batch of browned butter blondies with mini M&M’s and chocolate chips. When I realized just how easy blondies are to make, I knew I needed a dairy-free batch for my mom, younger sister, and I could enjoy along with everyone else. Thus these decadent chocolate chip blondies were born.

Why We Love These Chocolate Chip Blondies

Aside from being ridiculously addictive here are just a few reasons we love having these dairy-free blondies lingering around the house.

  • Moist. Yup I said it and I’ll probably say it a million more times before this post is done but these chocolate chip blondies are perfectly moist.
  • Super chewy. They are the perfect cookie kind of chewy. Soft, tender, and delightfully sweet.
  • One bowl. When all you need is one bowl to mix up these blondies, you know it’s going to be good.

How to Make Chocolate Chip Blondies

Ingredients You’ll Need

This easy blondie recipe comes together with just a handful of pantry-staple ingredients.

  • Plant-based butter– Melted and slightly cooled, this dairy-free butter helps tenderize these decadent blondies.
  • Brown Sugar- Sweetens the blondies while also keeping them soft and chewy.
  • Egg- Works to bind the blondie batter together.
  • Vanilla- Adds a fresh flavor to the blondies.
  • Flour- Gives just the right amount of sturcture so they hold their shape.
  • Salt and Baking Powder- Allows the batter to rise and balances out the sweetness.
  • Dairy-free chocolate chips– Studs the batter for decadently dairy-free chocolaty bites.

Directions

  • Prepare for baking. Preheat the oven to 350°F and line an 8×8-inch baking dish with parchment paper.
  • Melt vegan butter. In a large microwave-safe bowl melt the plant-based butter and allow to cool slightly.
  • Whisk in wet ingredients. Add brown sugar, egg, and vanilla to the bowl then whisk until smooth.
  • Fold in dry ingredients. With a rubber spatula, fold in the flour, salt, and baking powder until just combined.
  • Mix in chocolate. Next, add in chocolate chips and stir to evenly mix.
  • Pour the batter into the prepared baking dish and top with additional chocolate chips (if desired).
  • Bake in the oven for 45 minutes, until a toothpick comes out clean when inserted in the center.

Dairy-Free Changes to Chocolate Chip Blondies

  • Plant-based Butter– To replace a traditional butter in these blondies, I used a dairy-free butter alternative. For this recipe, I used Country Crock’s Plant Butter Sticks. They work identically to traditional butter and result in tender, melt in your mouth blondies.
  • Vegan Chocolate Chips– Replace semi-sweet chocolate chips with a free-from alternative. I have used Enjoy Life brand chocolate chips as well as Walmart and Kroger’s store brand free-from chocolate chips.

Serving Chocolate Chip Blondies

Trust me, you cannot go wrong with serving up these blondies warm and with a crisp glass of oat milk. But if you are looking for some other creative ways to dish these out, here are a few of my favorite ways.

  • Frosted. Slather your favorite dairy-free frosting such as Duncan Hines or Wholesome Mills Vanilla or Chocolate frosting.
  • A la mode. Top a slice of this warm chocolate chip blondie with a scoop of dairy-free ice cream.
  • Sandwiched. Cut one of the blondies in half to make two squares that you can frost between or smear some peanut butter between.

  • 1 cup Brown Sugar
  • 1 Egg

  • ½ cup Chocolate Chips

  5. Next add in ½ cup chocolate chips and stir to evenly mix.
