Chocolate Chip Blondies

Moist, gooey, and chocolaty, these dairy-free chocolate chip blondies are a one bowl dessert recipe perfect for any occasion.

  • 8 tablespoons Plant-based Butter (melted and cooled slightly)
  • 1 cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Vanilla
  • 1 cup Flour
  • ⅛ teaspoon Salt
  • ½ teaspoon Baking Powder
  • ½ cup Chocolate Chips

Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch baking dish with parchment paper.
  2. In a large microwave safe bowl melt 8 tablespoons plant-based butter and allow to cool slightly.
  3. Add 1 cup brown sugar, 1 egg, and 1 teaspoon vanilla to the bowl then whisk until smooth.
  4. With a rubber spatula, fold in 1 cup flour, ⅛ teaspoon salt, and ½ teaspoon baking powder until just combined.
  5. Next add in ½ cup chocolate chips and stir to evenly mix.
  6. Pour the batter into the prepared baking dish and top with additional chocolate chips (if desired).
  7. Bake in the oven for 45 minutes, until a toothpick comes out clean when inserted in the center.
