Add a little heat to your deviled egg platter with these Bacon Jalapeño Deviled Eggs! These easy to make deviled eggs are packed with bacon and just a kick of heat!

During the holiday season, I made dozens of deviled eggs. Each batch creamy, classic, and delicious. But after a few round of the classic I began dreaming of deviled eggs with a little more substance.

The combination of bacon, jalapeño, and egg truly cannot be beat, so I’m not entirely sure why it took me this long to put them all together on something other than a breakfast taco.

The creaminess of the deviled egg, the kick of heat from the jalapeño, and the crunchy, salty bites of bacon all work together in harmony for a deviled egg that is nothing short of magic. Pure, magic.

How to make Bacon Jalapeño Deviled Eggs

Ingredients You’ll Need

  • Hard boiled eggs– You can whip up a batch of hard boiled eggs following the Food Lab way listed below, or make them however you typically cook up hard boiled eggs.
  • Mayo + mustard– Gives the deviled egg a creamy filling.
  • Spices– A blend of salt, pepper, garlic, onion, and cayenne season this savory filling.
  • Bacon + Jalapeño– The stars of the show. You’ll want to use cooked bacon and fresh jalapeño.

How to Make Hard Boiled Eggs

Start by making your hard boiled eggs. This is seriously my favorite way to make fall out of their peel, perfect hard boiled eggs. To make Boiled Eggs The Food Lab way:

  • Boil 2 quarts of water in a large sauce pan over high heat. Once the water is boiling, carefully lower 6 eggs into the water and cook for about 30 seconds.
  • I use my plastic spaghetti spoon to lower the eggs into the pot.
  • Add 12 ice cubes into the water and allow it to return to a boil.
  • Then reduce the water to a simmer and cook for 11 minutes.
  • Drain the eggs and peel under cool running water.

Assembling Bacon Jalapeño Deviled Eggs

  • Cook bacon: After you have your deviled eggs cook, peeled, and cooling, fry up two pieces of bacon*.
  • Chop the bacon into small bite sized bits.
  • Seed and chop a jalapeño into small bite sized pieces. Set these aside.
  • Cut your eggs in half horizontally.
  • Scoop out the cooked yolks and place them into a large mixing bowl.
  • Crumble the yolk: Break the yolks apart with a fork. Set the emptied egg whites on a plate or deviled egg platter.
  • Make filling: In the bowl add mayo, mustard, salt, pepper, garlic powder, onion powder, cayenne, diced jalapeño, and chopped bacon. Stir the mixture together until fairly smooth.
  • Fill the egg whites: Scoop about 2 teaspoons into each cooked egg white hole. Garnish with extra chopped bacon and jalapeño.

*As I wrote “fry up two pieces of bacon” I laughed! Please feel free to use this time to fry an entire batch of bacon and save the rest for breakfast, snack, or whatever it is you use your bacon for.

Pro Tips for Bacon Jalapeño Deviled Eggs

  • Make your bacon in advance. You can fry it up and store in a Tupperware until you are ready to whip these up.
  • Hard boil your eggs in advance to save time when you plan to make and serve them. I like to make a batch of hard boiled eggs peeled and ready in the fridge at all times (in the event I need to whip up a batch of egg salad for lunch).
  • Have extras? Feel free to cut your extras up into a jalapeño egg salad. Serve it on a sandwich or as a dip for crackers.

Ingredients

  • 6 Eggs Hard Boiled
  • ¼ cup Mayo
  • 1 Tablespoon Mustard
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • teaspoon Cayenne Powder
  • 1 Jalapeño Seeded and diced
  • 2 Bacon Slices Cooked and finely chopped
  • Extra bacon and jalapeño to garnish

Instructions

Hard Boil the Eggs

  1. Bring a large pot of water to boil. Once the water is boiling, carefully lower 6 eggs into the pot. After about 30 seconds add 12 ice cubes to the pot. Bring the water back to a boil.

  2. Once the water begins to boil, lower the temperature to a simmer and cook for 11 minutes.

  3. Drain the water and peel the eggs under cool running water. Once the eggs are peeled, slice them in half, lengthwise. Scoop out the cooked egg yolk, place in a large bowl. Put the egg white halves on a plate or platter.

Assembly

  1. Fry 2 pieces of bacon and chop into bite sized pieces. Set aside.

  2. Seed and dice 1 jalapeño and set aside.

  3. In the large bowl with the egg yolks, use a fork to break the yolks apart.

  4. Add ¼ cup mayo, 1 Tablespoon mustard, ¼ teaspoon salt, ¼ teaspoon pepper, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ⅛ teaspoon cayenne, diced jalapeño, and diced bacon to the bowl.

  5. Stir mixture together until fairly smooth. Scoop 2 teaspoons of the filling into each egg white hole and garnish with additional bacon bits and diced jalapeño.
