Vegan Feta and Avocado Dip

Creamy, salty, and addictive this vegan feta and avocado dip is made with fresh ingredients for a delicious snack you will want to enjoy all summer long.

Ingredients

  • 2 ripe Avocados
  • 6 Tablespoons Vegan Feta Crumbles
  • ¼ cup Red Onion (diced)
  • 2 cloves Garlic (minced or grated)
  • 2 Tablespoons Parsley (minced)
  • 1 Tablespoon Olive Oil
  • ½ Tablespoon Apple Cider Vinegar
  • ¼½ teaspoon Salt (start with ¼ and increase as needed)

Instructions

  1. Slice and dice 2 ripe avocados and place in a medium sized bowl.
  2. Next add ¼ cup diced red onion, 2 cloves minced garlic, 2 Tablespoons fresh parsley, 1 Tablespoon olive oil, ½ Tablespoon apple cider vinegar, and ¼ teaspoon salt.
  3. Stir together until well mixed.
  4. Next, add 6 Tablespoons crumbled feta and stir to combine.
  5. Taste test the dip and adjust the salt based on your personal preferences.
