If I had a pool in my backyard this would be my “by the poolside” summer snack dip. As it stands, I have a kiddie splash pad and I anticipate it will be the splash pad snack of the summer.

Not only does my husband rave about it, but I have also been known to whip up a single serving batch of this dip to eat as my lunch.

It’s salty, creamy, has a little crunch, and truly pairs well with anything.

How to Make Vegan Feta Avocado Dip

Ingredients You’ll Need

  • Avocados– Ripe and diced into 1/2 inch chunks.
  • Vegan Feta– Crumbled for easy mixing.
  • Red onion– Minced to your desired size. I err on the side of a finer mince so I’m not getting large chunks of red onion in each bite.
  • Garlic– Minced or grated on a microplane. Personally I grate to make it easier to mix into the dip.
  • Parsley– Fresh parsley minced.
  • Olive oil– Adds a smooth blender to the dip that allows everything to come together a little more easily.
  • Apple cider vinegar– For a slight tang.
  • Salt– Enhances the avocado’s flavor.

A quick note about the salt: I start with half the amount of recommended salt. Once the dip is mixed together use the dipper you are planning to serve with the dip to taste test how much salt you need to increase.

Depending on the chip/cracker/bread you might not need to add more salt but if your dipper is low in salt adding more may be something that interests you.

  • Slice and dice ripe avocados and place in a medium sized bowl.
  • Add remaining veggies: Next add diced red onion, minced garlic, fresh parsley, olive oil, apple cider vinegar, and salt.

One of the best practices I have found is to use a container that pushes the lid in contact with the top of the dip to minimize the avocado’s exposure to air (which is what causes the avocado to brown).

Ingredients

  • 2 ripe Avocados
  • 6 Tablespoons Vegan Feta Crumbles
  • ¼ cup Red Onion diced
  • 2 cloves Garlic minced or grated
  • 2 Tablespoons Parsley minced
  • 1 Tablespoon Olive Oil
  • ½ Tablespoon Apple Cider Vinegar
  • ¼-½ teaspoon Salt start with ¼ and increase as needed

Instructions

  1. Slice and dice 2 ripe avocados and place in a medium sized bowl.
  2. Next add ¼ cup diced red onion, 2 cloves minced garlic, 2 Tablespoons fresh parsley, 1 Tablespoon olive oil, ½ Tablespoon apple cider vinegar, and ¼ teaspoon salt.

  3. Stir together until well mixed.
  4. Next, add 6 Tablespoons crumbled feta and stir to combine.

  5. Taste test the dip and adjust the salt based on your personal preferences.
