4 Tablespoons Plant Based Butter, Melted
⅓ cup Brown Sugar
½ teaspoon Cinnamon
1 Green Apple, peeled and thinly sliced
1 ¾ cup Non-dairy Milk, at room temperature
1 Tablespoon Apple Cider Vinegar
½ cup Plant Based Butter, room temperature
1 ½ cups Flour, all-purpose
1 teaspoon Baking Powder
½ teaspoon Baking Soda
¼ teaspoon Salt
¼ teaspoon Cinnamon
1 teaspoon Vanilla
¾ cup Sugar, granulated
Instructions
Preheat the oven to 350°F.
Melt ½ cup of plant based butter and pour into a 9-inch cake pan.
In a small bowl stir together ⅓ cup brown sugar with ½ teaspoon cinnamon.
Sprinkle the cinnamon brown sugar mixture over the melted vegan butter in the cake pan.
Press thinly sliced apple pieces into the brown sugar mixture to coat the bottom of the pan in apple slices.
Set the prepared pan to the side while you make the vegan cake batter.
In a liquid measuring cup mix together 1½ cup non-dairy milk with 1 Tablespoon apple cider vinegar. Set to the side for at least 5 minutes.
In a medium sized mixing bowl stir together 1 ½ cups flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, and ¼ teaspoon cinnamon and set aside.
Mix 1 teaspoon of vanilla into the apple cider vinegar mixture.
In the base of a stand mixer cream together ½ cup room temperature vegan butter with ¾ cup granulated sugar.
Add half of the liquid measuring cup mixture into the stand mixer and beat together.
Next add the flour mixture into the batter slowly.
Finally, pour in the remaining liquid measuring cup mixture and mix until just combined.
Pour the batter into the prepared baking pan and bake in the preheated oven for 50 minutes.
