Vegan Bruschetta Toast

Simple and flavorful, this vegan bruschetta toast is made with fresh produce lofted on toasty bread for a delicious appetizer everyone will enjoy.

Ingredients

  • 3 Tomatoes on the Vine
  • 1 Tablespoon Olive Oil
  • 1 clove Garlic (minced)
  • ½ teaspoon Salt
  • 2 Tablespoons Fresh Basil
  • 1 French or Italian Bread Loaf
  • Balsamic Glaze (to finish)

Instructions

  1. Slice loaf of bread into 1/2 -inch thick slices.
  2. Place the bread in the toaster or in the oven and toast to your desired level of crispiness.
  3. While the bread is toasting, chop 3 tomatoes on the vine into 1/4 inch cubes.
  4. In a medium bowl, stir together chopped tomatoes, 1 clove minced garlic, 1 Tablespoon olive oil, ½ teaspoon salt, and 2 Tablespoons fresh basil.
  5. Spoon the tomato mixture over the toasted bread.
  6. Drizzle with balsamic glaze and enjoy!
