2 pints Grape Tomatoes
4 cloves Garlic (minced or grated)
½ cup Olive Oil
½ teaspoon Salt
¼ teaspoon Pepper
2 cups Vegetable Broth (low sodium)
1 cup Water
12 ounces Pasta
8 ounces Vegan Feta Crumbles
2 cups Spinach
¼ cup Basil (fresh)
Instructions
Preheat the oven to 400°F.
In a 9×13-inch pan pour 2 pints of grape tomatoes, 4 minced cloves garlic, ½ cup olive oil, ½ teaspoon salt, ¼ teaspoon pepper, 2 cups vegetable broth, 1 cup water, and 12 ounces pasta.
Stir together and cover the 9×13-inch pan with foil.
Bake in the preheated oven for 40 minutes.
After 40 minutes, remove from oven and stir in 8 ounces vegan feta crumbles, 2 cups fresh spinach, and ¼ cup fresh basil.
Leave uncovered and cook 5 minutes.
Remove from oven and serve.
Add additional feta crumbles, basil, salt, or pepper as needed.
