Vanilla Chocolate Chip Protein Pancakes (Vegan)

Light, fluffy, and loaded with chocolate chips, these vegan vanilla chocolate chip protein pancakes are the perfect addition to you breakfast routine!

Ingredients

  • 2 Tablespoons Ground Flax
  • 5 Tablespoons Water
  • 1 ½ cups Oat Milk
  • 2 Tablespoons Apple Cider Vinegar
  • 1 ½ cups Flour
  • ¾ cup Oatmeal
  • ¾ teaspoon Salt
  • 2 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 4 Tablespoons Sugar
  • ⅓ cup Vanilla Protein Powder
  • ½ Tablespoon Vanilla
  • 1 Banana (smashed)
  • ½ cup Chocolate Chips

Instructions

  1. In a small bowl mix together ground flaxseed and water. Allow to sit for 5 minutes.
  2. While the flax egg sets, mix non-dairy milk and apple cider vinegar together in a liquid measuring cup and set aside.
  3. In a large mixing bowl stir together flour, oatmeal, salt, baking powder, baking soda, sugar, and vanilla protein powder.
  4. Add vanilla, a smashed banana, and the flax egg to the liquid measuring cup and stir to combine.
  5. Pour the liquid ingredients into the large mixing bowl and stir with the dry ingredients. Then fold in the chocolate chips.
  6. Heat a large non-stick skillet over medium heat.
  7. Scoop about 2-3 tablespoons of batter into the preheated skillet.
  8. Cook until bubbles form on the top and the base is light to golden brown.
  9. Flip and cook until the base is light to golden brown.
  10. Remove from skillet and continue to cook until all batter has been used.
