½ cup Vegan Butter (room temperature)
¾ cup Brown Sugar (dark)
1 teaspoon Vanilla
1 Egg (room temperature)
½ teaspoon Salt (Kosher)
½ teaspoon Baking Powder
1½ cup Flour (all purpose)
½ cup White Chocolate Chips (dairy-free)
½ cup Dark Chocolate Chips (dairy-free)
¼ cup Sprinkles
Instructions
Allow the ½ cup of plant-based butter and egg time to come to room temperature.
In the bowl of a stand mixer, cream together butter and ¾ cup brown sugar.
Add 1 teaspoon vanilla and egg and mix until combined.
Next, add ½ teaspoon salt and ½ teaspoon baking soda and beat until combined.
Then, slowly stir in the 1½ cup flour, adding about ½ cup at a time. Once all of the flour has been added stir until combined.
Fold in ½ cup white chocolate chips, ½ cup dark chocolate chips, and ¼ cup sprinkles and scoop into 1½ tablespoon sized balls.
Freeze the balls for about 30 minutes.
When you are ready to bake, preheat the oven to 360°F. Place dough balls about 2 inches apart on a rimmed, lined cookie sheet. Bake for 11 minutes.
